About Turkish guy being nice: the food he's making is called Aşure. It's been told it's the last meal Noah made in his ark with what's left in the kitchen. It's a dessert made with sugar, wheat, dried apricots, raisins, clove... It's made in the month of Muharrem (one of the lunar months of Hicri - Islamic calendar). And sharing this meal is important. You share it with friends, colleagues, neighbors... And this guy shares it in a whole neighborhood. Also he helps to animal shelters, orphanages, resting homes regularly.

This store owner is frequently quite generous to the customers, most of whom appear to be socioeconomically disadvantaged. So often such people are in the middle of a “food desert” with no grocery stores and are forced to pay high prices at convenience stores. I have seen his videos giving free items to kids.
I'd bet anything that if you asked that guy to choose between a couple of dollars or the option to not have a video of him at his lowest plastered all over the internet, he'd choose his dignity over the money. There's nothing touching about exploiting someone who's impoverished for internet clout.
