Been trying for almost 30 years to perfect Nona’s meatball recipe. I added nearly stale bread and the sautéed chopped onions about 5 tears ago and the family says I’ve done it. Oh and freshly grated cheese is a must. Now to makes sliders instead of subs. Thanks.

I really like that tip in the beginning where you broke up the packaged meat with a fork. Out of the package its so tight its hard to mix things in without really working it. With your trick that is solved.

When I was young and lived in Denver, most of the local Italian restaurants made a sandwich like that, but on a hoagie roll. The interesting addition was always a roasted hatch green Chile.

That cheese pull made me laugh, love it. That poor basil. I have had that happen. Now I buy basil at the nursery, they seem to do much better. The rolls you used look perfect. For meatball sliders I don't want a really hard rolls but I don't want rolls that are too soft and fall apart. As store bought marinara goes, Rao's is the best. Not too sweet like many others. Nicely done!

Your recipe combination for making the meatballs adds a great taste expansion to an old favorite, and your right, gandma would have popped you if you asked about gloves. She would say she did wash her hands, this mornin.
Yes, I can cook on the fly. But I know people that are completely lost if they don't have a step by step recipe to the letter. So I always appreciate someone that can simplify things and give you suggestions along the way in a cook, Neal is always on point.
