Awe, the Mouse and the Motorcycle was my favorite book as a child. Read it again last year, and at 43 I still find it a sweet story. Just found your channel today and am enjoy watching.
I make a simple energy bar that is equal parts of peanut butter, honey, powdered milk, and oats. Because I'm a mom of just one kid I use one cup of each ingredient mix them well flatten them out in a pan, refrigerate for about an hour and cut them into squares. My mom used to add raisins to this mix, but my daughter does not like them, and since she'll eat them just like this I don't add any chocolate.
We make a Flying Saucer . You get a flour tortilla and fry it in a pan of oil until its hard and light golden brown, flip it on both sides. Put on a paper towel to soak up excess oil. On the flying saucer smear refried beans then a layer of ground meat, lettuce, cheese, and whatever you like to top it with like your haystacks. We loved them as kids. My mom would serve with a bowl of hot stewed canned tomatoes instead of fresh. the combination was so good.
We make something similar except we call it straw hats and our base is corn chips. Then the leftovers we mix together with thousand island dressing (mix 1T taco seasoning with salad dressing first!) and we serve it cold as taco salad. By leftovers, I mean; corn chips lightly crushed, taco meat, beans (pinto or refried), lettuce, shredded cheese, chopped onions, and chopped tomatoes.
We make something similar to yohrs @aunt Lizzy.. years sgo my brother in law mare it and ots become as meail in ojr family as well.. we layer ours first with pinto beans (refried) ground beef seasoned with taco salad then spread with mexican shredded cheese and repeat. Place it in oven until cherse is melted and we use optional toppings like: lettuce, tomatoes, onions, salsa, avocado, cheese, and eat it with tortilla chips. 😋
Love your videos! Flax seed should be ground as whole flax does not break down unless you manage to crush it while chewing. Also, I agree with another commenter...your meal sizes are tiny! You could pack food for airlines! Lol. I hope the haystack you plated was for a 5 year old!

We call those burrito bowls but we use regular black beans (not refried) pico de gallo (fresh tomato salsa which is super easy and quick to make), no cheese sauce just the shredded cheese, and sometimes corn or sautéed peppers and onions. Just like chipotle! 😋

We do another version of Haystacks: Hawaiian Haystacks. Rice, shredded chicken, grated cheddar cheese, celery, green bell pepper, shredded coconut, slivered almonds, pineapple tidbits, lo mein chinese noodles (those dried, crunchy noodles), tomatoes, and gravy (cream of chicken soup mixed with chicken broth). We also make Mexican Haystacks, which are basically want y'all do, but we don't use rice.
Those energy bites look sooo good but I run a NUT FREE house as my 2 grandchildren who are living with me right now are allergic to nuts. So far I haven't found a good energy bite that doesn't contain nuts. Of course I've got plenty of cookies to make.

+Donna Baldwin ummm I am not super computer savvy. :) I had an Asus laptop for six years like a mini one and did all my work on that. My husband kept saying, honey just get a bigger one and I'm like no it works fine I'm not going to spend the money:). Since I have a business from selling books through my blog I need some write offs for tax time ..this past year my husband bought me one and I would have never bought it but he researched and found one that would work for me for a long time. He said honey invest once and you won't need another one.:) So he bought me a Lenovo IdeaPad 110 with 15 inch screen . I do really like it. It is big which is nice for the types of work that I do. I would suggest get what you can afford but invest so that it last. Like I said I had my other one for 6 years and we paid about 200 for it. It is still going strong. If you only do what you are supposed to do, like not download bad stuff etc it will last forever : ). I hope that helps some.

My son is gonna do teaching textbooks I think this year and I'd like to get a CD player that I can attach so he could do his math too. You were talking about bar cookies. Why couldn't you press your energy bites mixture into sheet pans and cut into bars or cubes? Considering the amount you make, it seems like it would go much faster.
I'm sorry that my mom doesn't have much money this month, yet she always has food for the grandchildren even when she only drinking water and tea for herself, she's forever putting everyone else before her own needs even when I was younger she worked as a dishwasher and paid rent and BGE.

Couldn't you make your energy balls as energy bars? You could press your energy mix in a cookie sheet cook then slice into bars? This may or may not work but if it does it has to be easier? Thanks
+Linda Segraves agree, I guess I'd have to cut them while they were soft but it may be hard to get out of the pan. I could freeze a bit and then cut. I like the balls as now I can go grab a few balls for each child who wants a snack. It just takes time :)

Get a small scoop (like small ice cream scoop) to make your balls. They will all be the same size. I also use my scoop for make meatballs.
