trying something this in real model of animal with armature and this new GN hair system have a so lagging result already with low density hair. in animated mesh you can`t use it in real work. so sadly
You can convert the geometry node system to an old school hair particle system where you'll be able to have physics. You can do so by selecting the hair, going to sculpt mode and selecting curves -> conver to particle system. The other way is to add a simulation zone in the geometry nodes and making a physics system yourself. It's hard, but it is possible. Have a look at the incredible youtuber & geometry node guru Cartesian Caramel. He has a video on it I believe.
