✔INGREDIENTS:
2 eggplants
Water and salt
1 red pepper
Mozzarella cheese 120g
Salt + pepper + olive oil
🔹
Olive oil
1 leek
2 zucchini
1 medium carrot
Salt and pepper
sweet paprika
Garlic powder
Tomato puree 50g
Parsley
Mozzarella 50g
Grated Parmesan on top
1st cooking: Bake at 180°C ( 356°F ) for about 20-25 minutes
2nd cooking: put it back in the oven at 180°C (356°F ) for about 15 minutes.

What is the function behind putting the eggplant into water and then drying it again? Just curious
To remove the bitterness from the aubergines. (obviously not all aubergines are bitter.)
It is not the water but a bitter juice aubergenes have which can be drawn out by just sprinkling the slices with salt and leaving them to rest for about half an hour, if you can manage an inclined surface, so much the better. This bitter juice will drain out. Nevertheless, after this step, yes, rinse them under tap water and dry them with papel towels.

@@CI10966525 i tested them without soaking or salting them (after roasting in oven) and they had a really nice taste. No hint of bitterness.
@@sayuas4293 Glad for you. So as the author of the recipe says: "obviously not all aubergines are bitter". In my experience here, in Uruguay, South America, they are quite bitter, even if they are big and ripe aubergines. If they have any hint of greenness on the outside, you are in for it!!
