- Sourdough bread is an old favorite that has recently risen in popularity.
Many people consider it to be tastier and healthier than conventional bread. Some even say that it's easier to digest and less likely to spike your blood sugar.
But is there any truth to these claims? Thats what I'm looking at in this video

I tried sourdough bread yesterday for the first time, with normal bread i get a bloating feeling in my stomach and feel sluggish, however i had 3 slices of sourdough with cheese and i had no bloating and discomfort and i had alot more energy after and my working afternoon was alot more enjoyable. Thankyou for this video.

I usually get my deli sandwiches with sourdough and I never feel full/bloated after eating a 8 inch sub .
I'm now nearly 50yrs old and in my early 20s I was a Baker and have always loved bread, and now this last week I have been eating sour dough bread. 😊 I'm never ever eating any other bread than sour dough 😊😊😊😊😊😊😊
I always thought that the reason why sourdough bread doesn't spike blood-sugar levels is because the bacteria digests most of the sugar/simple carbohydrates in flour, during the fermentation process. The sourdough bread that I make remains mostly colorless when I toast it because there's no sugar to caramelize.

I put a little bit of honey or sorghum molasses in my sourdough sandwich bread, and use either pear sauce , applesauce, or squash/pumpkin purée instead of oil and it comes out Super soft on the inside with a little bit of crunch on the crust, and browns a little in the toaster, but overall my body can digest it a lot easier, that is all I put in it, besides the flour and water and sourdough starter, and of course salt
I make it with half einkhorn flour for more nutrition.
I make sourdough bread every couple of weeks; two loaves at a time. It’s practically the only bread my husband and I consume.

I usually follow the baker’s percentage if I am making a straight forward sourdough bread:
Flour: 100%
Water: 75%
Starter: 20%
Salt: 2%
… and, the only ingredient that will vary is the type of flour(s) used, and sometimes the percentage of water.
I read a study that said sourdough is better for digestion, not because gluten, but because other proteins are broken down in this process .. gluten was actually never a problem with bread, obviously except for people who are allergic to it
I’ve been making sourdough breads for 6 years, but still make yeast breads occasionally. I have dough fermenting now for sourdough focaccia to bake later.

Important to note that sourdough bought at large scale grocery stores is not true sourdough. It is a “method” of baking, not a “flavor” of baking. The health benefits are solely because of the duration of proofing time, not that it is a “sour” dough

Sourdough bread has always been my favourite since mother made it from a growth named fred that lived in fridge. Hers was best but trader Joes is pretty good. Just started eating it again. Wonder why i crave it

Now what about white flour, if we bake bread using sourdough method but with 100% white flour, would it still be better or healthier than if we use commercial instant yeast for bread baking but with 50% whole wheat flour? I personally think the main problem is actually white flour.. I really want to hear from an expert like you 😊
Many artisan bakers use whole wheat flour in their sourdough. Better, I believe.
Nice, I’ve just started making sour dough breads and I love it. I had thought that it simply had a ‘health halo’ because it’s usually hand made and more expensive.

I’d like to point out though that not all sour dough uses whole flour and also that sour dough breads can vary greatly in their fermentation times.

I'm not really sure how much can be gained from the Glucose test when the Sourdough bread was only fermenting 8hrs and the commercial yeast reference bread was only 2hrs.
I do not get a crash with sourdough toast with my eggs like I do with eating biscuits and egg. I can eat a good bit and feel great and it keeps me more full than other breads. I realized bread is not unhealthy, just the way our american bread is processed.

@@lorrainecray3965 It's alright. Maybe I'm just very picky with food. I'll probably make french toast with it by soaking it overnight in a mixture. Fingers crossed that the sourness goes away. I just wasn't expecting it to be so sour that I can't even taste the cheese

Trader Joe's sells one bread that is both. It is currently my favorite. The ingredients also include yeast, so maybe it isn't a pure sourdough.

I find the biga method ii the most digestible bread cause your not adding anymore flour to your mix your fermenting the whole mix just adding water to reach that hydration

Hmmm, this is more confusing and conflicting information. On Ezekiel bread, I think you stated like we should not consume them too much as they are still wheat products even though they are heathier choice than regular bread. Is Sourdough bread healthier than Ezekiel? Can we consume them as much as we like? Or is a certain limitation/moderation necessary?
Use your brain. Eat and see.
You still shouldn't be eating tons of any bread. This video is just saying if you are going to eat bread, choosing sourdough would be healthier than conventional bread.

Come on, anyone that spends time watching this is probably pretty careful if not neurotic about what they eat. I know as much as the next man about nutrition and I come on here to look at all the comments. What a laugh.
I kinda have to agree with you Dennis. If you follow nutritional recommendations on fruit, vegetables, fat, fiber, no junk foods etc. then your probably eating healthy and your okay. No need to measure everything we eat and have to always eat the most healthy thing in existence (which doesn't exist)
You can eat as much whole grains as you want. Animal products and bottled oils are what you want to eat in moderation, if you eat them at all. You can eat a whole loaf a day if you want.

Hopefully if you can still respond, I was wondering about the acetic acid content in the sourdough which can disrupt the acidity of the stomach. Do you have anything to share about it? I know it's present in vinegar and that sourdough produces it as a byproduct of its fermentation. Any help on the info of to what extent is affects health is appreciated, thank you.

in my area it is near impossible to buy quality sourdough bread. respectable real bakeries are rare. and what the stores sell is a joke.

it's really not that difficult to make, there are tons of instructional videos here on YT. I recommend the Bake with Jack Channel, he's really good!
What's missing in your information is whether or not it is good for you. Better for you than other bread but some people will think it is good food.

I am from Latvia (currently living in Denmark) and my conventional bread isn't the white bread, but the whole grain rye bread :D So the question is - is the sour dough bread better than the rye bread?

I’d say the flour used is more important than the fermentation process so your conventional bread would likely be better than a white sourdough but not a whole flour sourdough.
Remember too that whole grain bread is often made with white flour with only a small amount of whole grains more or less for decoration and taste.
You want a whole meal bread, which can also have whole grains in it or not.
Most rye bread also only has a small amount of rye rather than being mostly rye flour.
A true rye bread will be very dense.

In one study they only fermented the sourdough for 8 hours! That’s not nearly enough. These scientists are not good bakers!

I don't know - are you sure that's not how long they left the dough to prove before baking? A good sourdough culture takes about ten days to get off the ground and then, if you leave it out it needs to be fed every day - if you keep it in the fridge you only have to feed it a few hours before you bake your next loaf. I put my culture container in a saucepan of hot water - that _really_ gets it bubbling fast!

You need salt! Get good salt and your body will thank you!
Sourdough is the method of fermentation. The only source of sodium is from the added salt which is also in regular bread.
Salt is optional.
The essential ingredients are unfortified flour and unfluoridated water.
Garn! It's as salty as you want it to be! Look, the human body _needs_ salt - but not the excessive amounts found in crisps and fries and takeaway food! Drop your sodium intake from other sources and put it in your bread instead - your bread will thank you!

Why is it called "baker's yeast", if you are a real baker, you will only use sourdough.
Nothing beats sourdough bread in terms of flavor.
