Mint Brownies | Small Batch | Feeds 2-4 people

  • Mint Brownies start with a chocolatey, chewy brownie base topped with a layer of mint frosting covered by a layer of creamy chocolate frosting. All you mint and chocolate lovers are going to be in heaven!!

    Brownie Layer Ingredients:
    1/4 cup butter, salted and softened
    1/2 cup granulated sugar
    1 egg
    2 Tbsp unsweetened cocoa powder
    1/4 cup plus 3 Tbsp all purpose flour
    1/8 tsp baking powder
    1/8 tsp salt
    Mint Frosting:
    2 Tbsp butter, softened and salted
    1 1/2 cups of powdered sugar
    dash of salt
    1/8 tsp mint extract
    few drops of green food coloring
    1-2 Tbsp milk
    Chocolate Frosting:
    2 Tbsp butter, melted and salted
    3 Tbsp unsweetened cocoa powder
    1 - 1 1/2 cups powdered sugar
    1/2 tsp vanilla extract
    1-2 Tbsp milk or cream
    Brownie Layer Directions:
    In a medium size bowl combine butter, sugar and egg. Beat until smooth and combined.
    Add in cocoa powder, flour, baking powder and salt.
    Line a 9 x 5 inch loaf pan with parchment paper
    Add in brownie batter.
    Bake at 350 degrees F for 20 minutes or until a toothpick comes out clean.
    Cool completely.
    Directions for Mint Frosting
    In a bowl combine softened butter, dash of salt, powered sugar, mint extract and enough milk to make a nice smooth spreading consistency.
    Add in a few drops of green food coloring if desired.
    Add frosting to top of cooled brownies. Place in fridge or freezer to allow frosting to set up.
    Directions for chocolate frosting:
    In a bowl combine melted butter and cocoa powder with a hand mixer.
    Add in powdered sugar, vanilla and enough milk/cream for a nice smooth spreading consistency.
    Add chocolate frosting to top of mint frosting and allow frosting to set up.
    Enjoy!

    Mother made them and they were delicious. Along with toffee bars, mint brownies are my favorite. I make them and use York peppermint patties melted in a bit of oil to flavor the brownies. I use a mix, Ghirardelli’s. I can’t see a major difference, ie, boxed brownies are just as good if not better. Is mint wintergreen flavored?
