Big mud crab sedated by ice slurry

  • Using an ice slurry for around 60 seconds is the quickest and easiest way to sedate large crustaceans like this tropical mud crab (Scylla serrata) prior to handling them for research or cooking. Chilled water is also chemical free which is important as chemical sedatives all end up down the sink and then into the aquatic environment where they can harm non target aquatic animals.

    I would like to see how it is killed after taking it out of the ice. Also, how do you kill a lobster humanely? Thanks for the videos. People definitely need to do a better job in killing fish humanely.

      stay curious Sorry, I do not have a video of killing the crab, but for my work (taking scientific samples of internal organs) it involves flipping the crab over on its back, pulling out the abdominal flap then flipping the crab back over while holding onto the abdominal flap. You then grab the back legs of the crab with one hand (I use my left hand for that) and quickly pull the carapace off with the other hand by pulling the abdominal flap and carapace upwards and forwards. When eating crabs (and not taking samples) I simply place the ice slurry sedated crab directly into boiling water (at least 3 or 4 volumes of boiling water to volume of the crab). Lobsters can also be placed directly into boiling water after being sedated in ice slurry, or you can split them longitudinally down the middle (medially) with a cleaver or knife after sedation. After that you can cook them however you like.

      No, in 60 seconds it is just sedated so it can be handled safely. You would have to leave it in the iced water for much longer (estimate 10-20 min) for it to kill the crab. After sedation we kill them immediately by removing the carapace, so we can then take the relevant samples, etc. we are after.

      ikijime I thought the human way to kill a crab was to puncture it's body right in the middle of the underside shell. Is this not the case? Doesn't the removal of the carapace only attend to one of two main nerve centers/brain?

      robotsongs No, puncturing the body in the middle doesn't deactivate all of the main nerve ganglia. Even cutting them in half does not work very well with crabs as the different sides of the crab will go their separate ways - it is not immediate death. Because crabs do not have a central brain as such, the quick removal of the carapace is the only effective way to deactivate all of the ganglia at once.

    When I seen "ikijime
    " I thought of a video I recently seen on killing fish humanely so I clicked on this video. This is NOT "sedating" this is shocking the crabs body & is not humane. Humane for the person not wanting to get hurt maybe, but not humane for the crab.

      Where is your evidence ? The science suggests crustaceans do not have cold receptors bio.biologists.org/content/early/2015/02/20/bio.20149654 and that slurries are a fast and humane way to slow them down. www.ncbi.nlm.nih.gov/pubmed/30231519As mentioned before, placing crabs in the freezer as is usually advocated takes much longer and entails long periods of air exposure. This is 10 times faster than freezing, and speed of induction into sedation is a hallmark of good welfare.

    I thought you are very humane towards animal for a while since you uploaded a video of ikejime method before (wrong ikejime actually) But this video proof me wrong. You are shameless man!

Placing them in the freezer as is usually advocated takes much longer and entails long periods of air exposure. This is 10 times faster than freezing, and speed of induction into sedation is a hallmark of good welfare.

      What are you talking about? Sedating live crabs in an ice slurry is one of the humane ways of killing live crabs approved by many animal organizations.
