Prep:
½ cup chopped green onion
1 cup chopped cilantro
1 cup chopped culantro or sawtooth coriander
2 thinly sliced kaffir lime leaves
1 sliced medium shallot
1 cup sliced ham
1 large juicy lime (more if you like it sour)
1 cup roasted peanuts (topping)
1 handful of fried dried chili peppers (optional topping)
Rice Ball Ingredients:
2 tbsp. red curry paste
2 tbsp. fish sauce
2 eggs
1 tbsp. white sugar
6 cups cooked Jasmine rice
1 tbsp. paprika
1 cup unsweetened coconut flakes (or grated coconut if available) soaked in coconut milk
Deep Frying Instruction:
Heat oil to 380 degrees or medium high setting. Mix 1 cup of water with rice flour to coat the rice balls so that they won’t break during the deep frying.
Instruction:
Mix rice ball ingredients well. Add 6 cups of cooked Jasmine rice. Roll mixed rice into balls and cook in 380 degrees heated oil until golden brown. I made the second batch a little more crunchy by cooking it a little longer.
Enjoy with red or green leafy lettuce!
