The flying drives me a teeny tiny bit crazy, much of it was in the tutorials, but some finer points are left for the player to figure out, which I am not a fan of.
After selecting the target with E you are already locked on as long as you keep the ship inside your large white circle and there is a small white circle around their ship. This will make any of your non-missile weapons track them anywhere in your big white circle. You need to have a certain distance between you and the enemy and keep the enemy ship a bit closer to your crosshairs if you want your missiles to follow them. Missiles won't lock on past a certain distance, this is dependent on the launcher you install.
The ship has it's best turn radius at half speed, the ship will automatically slow down to it's optimal speed during a turn and speed back up to your previous speed while not turning. It basically does all the acceleration for you. This means every time you boost or hold w during a turn you are causing it to turn slowly and therefore making it easier for the AI to hit your ship.
Lasers are good vs shields, ballistics are good against hulls, missiles are good against both, so you should be able to allocate between the weapons as needed to speed up kills. A better ship helps significantly.
Boost will break enemy missile locks. You can cancel your boost with S so you don't need to wait for it to recharge if you only need to boost for a short period in order to break a missile lock.
A fun playthrough to watch overall, though. Keep it up!

I have never seen anyone with such a talent for going the wrong way. If the game needs you to go left, you go right. If you need to go up, you go down. If you need to go straight forward, you turn 180 degrees and leave.😂

Kind of a very contrasting perception, like you're 7 years old. I'd say the planets just don't look good.
