Wow it's like the Alfredo I make only backwards! I melt butter then add parmesan a little at a time so it blends more evenly and stir, then add milk and season only after bc the cheese is salty. Sometimes I cook chicken or mushrooms in the butter first, then use the same butter to finish the sauce. I'm going to add the other cheeses like you did! Mmm!

Imagine being Italian and lactose intolerant
Milk and cream are not that common in Italian cooking. Authentic Alfredo doesnt even use cream.

@@alfiedykes557 they may be made with milk but most hard aged cheeses like real parmigiano are considered lactose free
Many cheeses are naturally lactose free and its been a couple of years that many "lactose free" Version of other tipe of cheeses are available
Like...me? Lol it's hell but some types of cheese are lactose free or aged so I can eat those once in a while

Fun nutmeg fact: It’s a seed! Part of the flesh is edible and kinda sweet, and another bit is dried and ground into the spice mace! It’s a versatile lil’ fruit! :)

Its in the italian blood morphology. Like it has been their food for centuries that they see it as a casual food. I remember my cousin who lives in italy telling me he had pasta everyday at school and yet they were all in good shape. But its also about portion size and their habit of going to the gym after work

When you said that butter is burro in Italian, it reminded me when I was in elementary school one of the subjects was Italian (all of this is on Peru btw) and during a test we needed to draw the words the teacher gave us, one of the words was burro, the thing is that in spanish burro means donkey and a classmate instead of drawing a stick of butter, he drew a donkey, it was funny because it was a really good drawing 🤣
My favorite Italian/Portuguese mix up is cara mia meaning my dear in Italian but my face in Portuguese

@@albo_9822 awesome thank you. I am not familiar with that cheese and haven't seen it in shops. Thinking of replacing it with cheddar or a Dutch cheese. Hope that's not...too sinful
@@MrMelange i don't know where you live, here in Italy is pretty common to find Groviera cheese in stores, that's because it's a swiss cheese and we are neighbor with them.
I think cheddar is pretty different, but maybe it can work, in my opinion Emmentaler cheese is the best option to replace Groviera cheese and it's easier to find it, the only problem is related to the difficulties to melt the Emmentaler, so you should grate it very thin.
