Ash will work, just don't get it wet and don't leave it outside. For the next project try hickory. For the handles you will need hickory sapwood, so choose pale-looking wood and don't use the reddish pieces.

One of the reasons why the handles could have broke is you didn't use the slide up method, it's a lot sturdier in general
Enjoyed the forging build.
However, when the handles broke and you showed the grain...I knew exactly why. You oriented the grain 90 degrees out. All the axes, hatchets, or hammers that I have seen have the grain inline with the blade or force applied.
