yo this is way better than like tasty or that other pretentious kitchen show, not only does the production value match or is better but it showcases authentic food from real people around the world and not just the same 8 New York folks working in an exclusive food magazine and acting all snobby about Western-oriented food. Love it.
And so many people are going to try to copy her format.
I really love how she brings attention to middle eastern and southeast Asian food. And she doesn’t try to put her own spin on it or Westernize is. Good authentic food from the people and not based on a trend.

@@aliciamesa5382 I get what you mean but at the same time I don’t really agree because as a picky eater, I can assure you that it’s not because I am close minded or anything. Apparently, the way we process flavors in our brain is really different for many people. Some people don’t feel tastes as much as others and I guess it’s easier to enjoy more foods when you don’t feel the tastes really strongly.

My Grandma who's an Indo told me that these Indonesian food are comfort food because you have the locals cook it for you and you just wait in your dining room in comfort lol

i love how everyone's description of a comfort food is just them being reminded of their childhood and how most foods were serve by their grandmothers when they were young ❤️

I think that is the definition of comfort food. I suppose it could also be something someone besides family made that made you feel warm and safe.
Soto Ayam has to be one of the best things that I ate when I was in Indonesia, well maybe next to Gado Gado (basically a huge arranged salad with boiled eggs and a peanuty sauce). I'm a bit weird, usually when I need comfort food I go for tons and tons and tons of vegetable/fruit forward dishes

@@sjwscumbag5839 true, that's why soto ayam is not a comfort food for western people, but in Indonesia you can find that spices almost in every household and we Indonesian people can find soto ayam everyday in every where, every province has different soto ayam style,very various from the most simple to the most complicated recipe
I think there is a difference between comfort food you like someone else to cook for you and comfort food you like to cook for yourself. A traditional Newfoundland Jiggs dinner makes me think of my home, family, and the comfort of childhood but when I want to cook myself comfort food it’s instant noodles or fried bread with an egg in the middle.
Then have indomie Soto Ayam instead
I agree with Beryl, I'm romanian and I feel that eastern European food is totally slept on! It's SO amazing AND comforting but I'm surprised how many people haven't tried it. I'm so happy she featured several Eastern European dishes in this episode 😊

I really like this idea-where people come in to talk about their own dishes. It's a lot like gbs's style, except you're not actually going to the country.

This channel is soooo underrated. The Champorado with Tuyo is the bomb. You could flake the fish by using your hands and sprinkle them on top. That's the most convenient way of doing it, how I do mine at least. That's actually a special treat for us coz we use Premium dark chocolate for ultra chocolate goodness. Then milk should be powder for ultra creamy milkiness.
Soto Ayam takes me back. Beautiful times. I'm from The Netherlands and i'm partially Indonesian.

Mamaliga! What can I say? 🥰 I fell in love with this dish as an exchange student in Romania. I remember my first night with my “new family”. They were so nice but it was awkward. I was thinking, “What have I done? I’m here a whole year!” I felt overwhelmed and suddenly scared.
At dinner we all sat down together to eat. My host mom sat a BIG bowl of mamaliga on the table. The youngest little brother said, “Mamaliga!” With a big smile. I knew I’d have to show I liked it no matter what so I wouldn’t offend them. With my first bite, I fell in love. It was magical. It lightened the mood, and the awkwardness for all of us faded.
At the end of dinner, it was time for bed. Mama in broken English, came to me and said, “My son. Love you. Happy for you here”. Mamaliga made me a Romanian son. To this day it floods me with the feeling of safety, comfort and family. ❤️

I remember growing up with mamalega with feta cheese and jam; I'm Ukrainian btw. It is really cool how so many East European cuisines cross-over and share foods. I love your smile and how excited you get trying something new.
My favourite is with cottage cheese or braised cabbage!!
As a person in the American South this looks like cheese grits. And we people are on the savory side or the sweet with jam. Homemade if you are lucky

My grandmother passed away a few years ago even at the end of her battle with dementia she would ask if I was hungry and tell me to make sure I had given her great grandson (my son a bottle)....I miss her so much

It makes me sad and happy at the same time when people talk about their grandmas cooking for them. I never saw or met my grandma from my dad's side cuz she died before I was born and my mom's mother lives all the way in Philippines and I'm here in India! Although seeing all these people and their recipes makes me so happy💯😩❤️
the way that she celebrates both the cultures and her culinary prowess simultaneously is just so...... inspiring and pure
imagine saying opor ayam as your comfort food, and she chooses you. the amount of effort of making opor itself might be 2 days, because all of the side dishes and making lontong and making the soup, and some bunch of other things to do. If you see this comment and curious about opor, it's basically a very rich broth chicken soup with lots of spices and coconut milk, I usually eat it when eid Mubarak or eid adha, and it's from Indonesia.

In my family, we add a little bit of sour cream to our bowl and a hardboiled egg. It makes it creamy

Perhaps there is a hidden ingredient in all these dishes, the love, care and attention in their preparation?
Would like to believe that, but it might also just be that they weren't afraid to use loads of fats, sugar and carbohydrates in their cooking, which are all the things our body thinks taste best and wants to eat more of because they will help us store energy that we would need in hard times when we can't get enough energy through our food.
But then again, because they love you so much, that's why they want to feed you well and take extra care when cooking and the food turns out extra good. So you're probably right :)

The thing about indonesian cuisine is that most of it is quite complicated to make because it was made to fill up the serving of one family and most of the time for the dinner then next day for breakfast so you don't have to cook everytime you hungry thus why we made it delicious enough so that we're not bored of the taste after one meal. If it's just a random craving we just buy it in delivery or in a small stall just around the corner.
Oh yeah, if you gonna make make another soto again, do add thinly sliced and fried potato (no need salt, just plain fried potato chips) and eat it together with soto. And if you want it to be even more exotic, get a coconut flakes in store and roast them a little on top of frying pan with no oil, fry thinly sliced 1-2 clove of garlic, then put them all in food processor. Add to your soto ayam together with the potato chips.
Yup, that's why I even though rendang is my most favourite food in the world, I cant eat at home. It's just too complex. I am a Filipino by the way and I need to go to an expensive restaurant in front of Indonesian embassy just to have rendang
The thing with Indonesian cuisine is... YOU EAT IT WITH RICE.
That's why it tastes so rich.
And basically this also for the other Southeast Asian foods. Especially from the Malay ethnicity. Malaysia, Singapore, Southern Thailand, Philippines(but Philippines is kinda.. More westernish and tribe-ish. They also eat the food without rice too and with some raw n extreme ingredients such as balut and the sago worm).
They always cook food for the whole family and to eat with rice. Except for some dessert. Dessert is dessert.. u eat it without rice of course XD.
That's why the taste is so rich. saltier, spicier, sweeter, sour-er, etc. It's supposed to eat with rice.
And btw, that girl gave u all wrong information about "Soto ayam". Soto is not soup. Soup is soup. Soto is Soto. But yeah it is on the same category as soup in English.
But we also have chicken soup recipe. Soto n soup are different.
Soto is soto. Soto is more like curry than soup. If curry can keep its name instead of "veggie spicy soup", then Soto ayam also need to stay as Soto ayam. Not "chicken soup". Or maybe "chicken Soto" is fine. Ayam = chicken.

Beryl, I just found your channel a few days ago and subscribed almost immediately. Since then I have been watching a ton of your videos. I must tell you, the way you present each dish is so relatable. You are not over complicating things with chef terminology or saying if you don't have this ingredient you can not make this dish. You are exploring food from around the world and making it accessible to all. You are doing a very good job and I hope you have great success.

At the beginning, she clarified that “comfort food” is a personal thing, so she said she wasn’t going to claim that any one dish represents an entire culture or country. I take pleasure in cooking, so it doesn’t matter if the dish is difficult or time-consuming. “Comfort food” is, indeed, different for ever person. I live in Indiana, yet MY favorite comfort food is a Dutch dish called stamppot. Kale and mashed potatoes with smoked sausage.
I can’t say more, this is not about “comfort food “for everyone, but for someone, even its complicated one, u will don’t care about it.
As a Dutch person this is such a pleasant surprise to hear! Stamppot is any mixture of potato, vegetable, meat and gravy when mashed together here. It's often eaten with sausage but I also love it with bacon cubes or sliced pork belly. Your favourite is probably the most iconic stamppot along with peen-en-uien (carrot and onion) stamppot.
Oh, you'll probably love to know that some people like to add a little bit of mustard or piccalilli to their mash to add a hint of acidity. Often once you've almost finished you plate you will be asked if you want apple sauce. If you say yes, a spoon or two of chunky apple sauce gets thrown on the plate. Some people like to keep the sauce separate but generally there will be potato bits in the sauce when you eat it, lol. It might sound gross but it's surprisingly nice!

I love that you made Fideo! It’s definitely a Mexican/Latin comfort food. It can be cooked dry like stir fry or wet in a broth. I love my mom’s fideo con pollo. Add some fresh homemade flour tortillas and maybe some beans, and BAM, instant comfort food. ❤️
I’m half Indonesian and when I took my best (white) friend with me to Bali when we were 16, she would eat up to SEVEN bowls of Soto Ayam.

I’m from Moldova and I grew up eating mamaliga with sour cream, feta cheese, scrambled eggs and a type of homemade canned pork meat called jumere. Mamaliga is not supposed to be liquidy like polenta, it’s more like cornbread and it’s supposed to be “dipped” in shredded sheep cheese. When I was a kid my mom used to make me bite sized balls of mamaliga which were then rolled all over in a layer of sheep’s cheese, with or without a dollop of sour cream on top. We used to call these “tiny bears”.
I simply love seeing and hearing from other folks across the globe. You all are so lovely to share what is important, loving, and creative about your favorite foods. I may not be able to try them all, but I am honored you would want me to. Here’s to kindness and friendship!

Mamaliga is the best haha. You can eat it with warm milk and sugar, too. The mamaliga just has to have a softer consistency. Or as bread (with less water). You can make it into balls with cumin and sheep's cheese. Eat it with a great stew. You can fry the mamaliga up and eat it with gravy.
Try mamaliga with fried fish or greaves, both garnished with musdei (garlic sauce). I know, too many carbs, but...

As a Romanian, this makes me so happy to see! My mom makes this all the time when I come to visit and it is soo good. We also eat it with pork sausage or pork bacon fat!

Most Indonesia's food are Indonesian food if you smell the cuisine all over the neighbourhood. We literally let our nose try it first 🤣 I hope you share Soto Ayam to that neighbour of yours, Indonesian food are made to be shared that's why we make it on a big pot most of the time. I see you eat it with a bowl of rice, that's a big YES! 👍
Exactly! After having a bowl of Soto Ayam, mom be like "please give this (Soto Ayam) to the uncle or aunt or grands or the neigbour". It is just another normal day in Indonesia 😁

If you like polenta I have a version of my great grandmother's that I modified you can try.
Polenta: blend 1 cup corn meal in a blender to refine the grain to a finer texture.On the stove bring 2 cups water and 2 cups milk to a low boil, Whisk in 3 tbs of Better than Bouillon Chicken, 3 Tbs butter, 1 Tbs garlic powder, 1 tsp black pepper and salt. Add in blended corn meal, whisk constantly 10 min. Add in 4 oz of herbed feta or Chevre (Humboldt Farms) and a quarter cup of shaved parmesan and continue whisking another 2 to 4 minutes until cheese has melted through and throughly combined. You can add additional herbs to taste.
Ragu topping(Start this First): Saute together 1 medium or 2 small shallots thinly sliced, 2 large portabella mushrooms diced, 2 large carrots cleaned and diced. Saute until soft. When the veggies are soft add in 1 to 2 cup(s) of veggie/chicken stock, 1 can of diced/crushe roma tomatoes (san marzano), 2 tbs of tomato paste, 2 tsp Italian seasoning, 1 tsp of s & p, and reduce down on medium to low heat for 30min to an hour depending on how thick a ragu you want while stirring occasionally. You can also choose to add in ground lamb or beef to the ragu for a heartier dish. This is great to have in the fall or winter months as a comfort dish.

Yaaaas!! When I was a teen, I'd come home every day after school and my mom would leave me a note with what to defrost and prep for dinner. I'd set everything up for her to finish up. I always hated when the list in hot-as-balls August was for albondigas, cocido, or caldo de pollo. Aaaaaah!!! That's what got me to start cooking instead of just prepping. Maybe that was her plan all along. 🤔🤔

aww I'm so glad you liked kluski śląskie, they're so delicious and filling, in Poland we have tons of varieties of different potato/flour dumplings, some are made sweet and some savory, my favourite are leniwe which literally translates to 'lazy-ones' (made with flour, egg, cottage cheese) and of course pierogi ☺️❤️ 🇵🇱
My comfort food is a casserole my mom learned from her childhood babysitter, this sweet older woman named Pat. My mom doesn’t have a lot of good memories from childhood, but Miss Pat’s food is one of them!
Miss Pat’s casserole is made with a base layer of egg noodles, then you cover that layer with a combo of cottage cheese, cream cheese, fresh parsley, dried oregano, salt and pepper. My mom tops this layer with her own Sunday sauce (like a bolognese) with ground beef, ground pork, and a mixture of seasonings. Then you cover the whole dish with cheddar cheese and bake until golden brown and bubbly! We make this for every occasion, but especially when things are tough or we have experienced a loss. When I need comfort, this is the recipe I always make after a quick call to my mom! 💕

I know that México and Filipinas are cousins because we also have a dish named ''champurrado'' (this is how we write it on our side.)
I’ve thought the same for a while. They also have chicharrón and adobo and stuff like that. I also thought it was interesting that the concept of both champurrado versions had similar ideas. (Starchy chocolate porridge) I’m sure there is historical overlap in our ancestry :)

That dried salty fish on philippines comfort food is also a one of comfort side dish in indonesian lunch. We called that fish 'ikan asin'. We eat it with warm rice, belachan sambal(sambal terasi), sour soup(sayur asem) or just raw veggies, fried tempe or tofu or both, and our best tofu is yellow tofu, which is made and then soaked in salted tumeric water. So the tofu is not bland like chinese tofu. Perfect combination for lunch. Especially if the sambal is very very spicy.

@@4030yes in rural areas, in Romania, long time ago, people were poor and could not afford a metal spoon and so many people used wooden spoon and so it remained a tradition to eat that food with that spoon, we also have a traditional bowl called "strachina.
It is said that mămăliga/polenta taste better with wooden spoon from a strachina.

As a Polish person, I whole heartly approve of the polish dumplings. They are also amazing on its own with melted butter and sugar (how dumplings where introduced to me as a kid 😂)

@@bearo8 depends do you want something sweet or savory? for sweet I've made Cornulete with jam filling, and they're quite easy (no frying just oven baking) or Cozonac is one of my personal favorites. for savory, I've made sarmale(cabbage rolls), and I think they're my favorite, there's also mici, Drob de miel (which is usually made for easter, but I would eat it all year round) Salata De Boeuf (also usually made for easter and christmas, but it's so good, the only cooking it involves is the meat, which you dont need to add, and potato's that you'll need to boil) hopes this helps!

Champorado on a rainy day (or a typhoon) is sooo comforting. I like champorado with dilis (fried anchovy) only because it's easier to eat with every bite. But any salty fish will do. Also, i prefer it to eat it with freshly fried fish so it'll be crispy.

i'm really really curious about this, i've noticed that Mexico and the Philippines have many things in common. here in Mexico we also have a beverage named champurrado that's made with corn instead of rice
its due to the Philippines being a Spanish Colony, and Mexico and Philippines having a culture exchange due to the Manila Galleon Trade
also I'm Filipino and the Mexican Dishes are my favorite snacks when I'm in the mood of cooking!

@@antoniobonito787 Oh that’s interesting. We also have tamales wrapped in banana leaves, they’re called tamales Veracruzanos. They’re made with corn masa and have many different fillings. My favorite are the ones with pork in a red sauce.
I started crying as soon as I saw the "sopa de fideo" it is also my comfort food, and makes me feel like my mom is still here. This reminds me of me coming from school and her welcoming me with a hug and a bowl of that soup.
I'm sorry for your loss. My mom passed away recently. Fellow Mexican here. I loved her sopa de fideo, I actually loved everything she made. I don't cook half as good as her and I miss her so much. Moms should be eternal.

So this was the 18 billion video of yours I have watched since I found your channel to day and it's pretty great. Honestly, and I think this is something I struggled to understand at first when I was explain it to my husband and what made this so appealing and it turns out I think it's that you seem to genuinely enjoy things, and the viewers telling you in their own words really makes this whole things not just work but unique, but I think the biggest thing is that you are just really likeable. It's been a lot of fun.
My mum is first gen Roumanian and made this once in a while but hers was soooo simple. Make plain polenta. On the side of dish put a mix of cottage cheese with sour cream. So simple yet so amazingly good!
Every summer I would spend at my grandmother’s cuntryside house and we would always eat polenta with cheese and sour cream and a fried egg on top.
And just like Andreea said, our portions were huuuge and there was always some leftover polenta from lunch that qe would it with milk that night.
Sometimes I eat it when I feel lonely or nostalgic because it was reminds me of my childhood.

You must have the most diverse pantry buying all these ingredients. I'm curious what 'fridge cleaning' meals you're able to prepare after a day of work when you've forgotten to shop for groceries. I imagine sometimes you open your fridge/pantry and say 'Oh would you look at that, I have all the leftovers needed to make a common Romanian comfort food'.
