We have over 30 tomato plants growing in our vegetable garden each year. We give tomatoes to friends/family/neighbors and also make tomato soup to freeze/can and have on hand until the next harvest season. I had never really found a good sauce recipe until now. I can't wait til our tomatoes are ready. I will be trying your recipe. Thanks.

I ended up doing this without onions and used onion powder. But decided to add 1 medium sized Hungarian wax pepper and 1 green cayenne pepper from my garden, both sliced very thin. It added just the right amount of heat to my sauce and came out wonderful

A glass jar with a screw top would be best. My mom always stored it in the basement in the dark. Usually went through all of them before the year was out. You'd have to look up how to properly jar tomatoes and how long they're good for yourself, though.
It's called canning. You just have to sterilize jars and lids etc. I've had some last three months, but I always eat it by then so. But it can last for years.
Red wine, basil pesto, garlic, parsley, oregano. That’s what I add to mine to give it a nice flavor with a rich taste. Good over fetachinni or spagetti

I do mine completely different... I have never used ice. I just scoop out the center with a spoon and lay the inners face down. When they soften up a little then I place a top on the pot and add oil. After hit it with flavor. Cream is awesome. Especially DRY cream. It thickens up differently. A little bit of a cornstarch slurry and white wine. Done . 😊

@@fatsnorkel A couple of other options for you to look into would be to make a fermented tomato sauce. Another option is to vacuum seal the jar. There are a couple of different ways to vacuum seal Mason jars. Keep in mind that if it's vacuum sealed but not fermented, it will last for at least 5 days in the fridge. Beyond that, you'll have to decide if it's still good or not...

I fry off some fresh chilli, cumin seeds, crushed garlic and half as much crushed ginger with the onions and maybe a couple of cloves. Gotta add some sweetness, that's a must...sugar, orange juice instead of vinegar, grated carrots is good.
I'm doing this right now! Just that I blend it all in a blender instead of cooking everything together because I want it to be smooth. I also added one carrot and one small onion instead of a regular sized one xoxo I'll update how it turns out

Agree. Sauce needs something sweet, teaspoon of sugar will do. Many people put carrots in tomato sauce because they're sweet and add bulk.
2 teaspoons of brown sugar will also do it if you can't find molasses

I made a big pot of chili with pork , taro and calabasa squash. No beans. This sauce was excellent. My first attempt at fresh sauce.

If you put it in the jar while it’s hot and close it and turn it upside down until it cools down it’ll last for a long long time.
For anyone who doesn't have that fancy blending tool, just wait for the sauce to cool a bit and put it in a blender.
