Thukpa Recipe with Chilli chutney
Step 1
Prepare vegetable stock (you can add chicken too, as per your taste)
In a kadhai- 2 liters of water for vegetable stock.
Let the water boil then add bay leaves 2, Peppercorn- 10, Ginger- 2 inches long, in pieces, garlic- 6, coriander stem- handful, onion- 1 in chunks, carrot- 1/2 cup, beans head and tail or beans cut in 1/2" size 1 cup , cauliflower- 1/2 cup, tomato- 1/2 cup, mushroom- 5, boil for 1/2 hour to 45 minutes on med-low flame.
Step 2
Prepare Chilli paste
In a blender add garlic pod - 1/4 cup, ginger- 2 tbsp roughly chopped, peppercorn- 1 tbsp, coriander seeds- 1 tbsp, jeera seed- 1 tsp, salt. Add little water and grind coarsely. In a pan take oil, heat and add the coarse paste and roast for a minutes. Add chilli flakes 1/2 cup, and roast nicely. Don't burn the chilli flakes. Meanwhile in a pan add 1 cup oil and boil it. Add this oil in the paste pan and let it cool and store it.
Step 3
Prepare noodle
Adjust the noddles quantity as per the head count.
Note, noodles should have a bite. Don't boil and make it very soft.
Step 4
Prepare the soup (you can add small chicken pieces and fry it well, as per your taste)
In a Kadhai, heat the oil (mustard oil or butter can be used too).
Add garlic 1 tbsp, ginger 1 tsp, green chilli- 1 tsp (all finely chopped).
Add these veggies, onion, carrot, beans, mushroom, capsicum finely chopped.
Add tomato and let it cook nicely till the raw smell goes away.
Note, we should not cook the vegetables completely, all should have a crunch, now add hot vegetable stock and let it have a boil. Add light soy sauce (I have used dark and reduced the quantity), add pepper, add lemon, adjust salt.
Step 5
Assemble Thukpa
In a bowl, add the soup and then add noodles. Keep the chilli chutney on the side and enjoy it while it is hot. Happy winter guys.

I feel like how you and Ashu seem to always be on the same page as me in life. I don't know how that is but it is spooky! LOL! I too have been trying to concentrate on my skin more this winter. I made a face and body cream. I feel like they both have made a difference. My house does not get a lot of sun because of how it is positioned so I really have to make an effort to open blinds at the right times of day and it makes a huge difference in the home and my psyche. Winter season I love drinking hot teas and warm bowls of hot cereals. Mmm...

Hello Jayaji.. As usual awesome video.. I have a doubt. What is air wash mode in your washing machine? Can u put a detailed review of your washing machine.. We are planning to change ours and I feel after air wash in LG brand the clothes are crumbled a lot.. Is it causes crumbleness in your washing machine also ? Is it worth the investment?

Clothes will have wrinkles. The best way is to load less clothes and take them out as soon as the cycle is over.

Hyderabad, bangalore climate are same , in South India its not too cold like north India. Lat week we HD 4 days leave fr national day and my husband HD gn to Mumbai fr sm work, so we joined him n jaipur, went to ranathambore national Park, choking Dhani restaurant, karni mata temple, bikaner, jaisalmer, tanot mata temple and longewala museum I rajasthan border, jodhpur , delhi and back to my place.we were n delhi fr 6hrs fr shopping but unfortunately last Sunday there was sm election and all the shops and malls were closed in delhi, so we ate only aloo tikki and cm back to Dubai, 😭😭

Needed a break so went with fly and enjoyed the cold weather of rajasthan.
