I believe in my own dumb little personal theory that when she heard about the commander, Tarter, being defeated, she found a different way out of the metro because she technically worked for him. From there, luck was constantly on her side, as she was able to easily get an apartment and a job, and because of her impressive musical talent, she became incredibly well known. In Splatoon 2, the stage AnchoV Games has a picture of her that can be seen whether or not you have the DLC. A dumbhead canon of mine says that Paruko (Harmony) used to work at that place. because of both of their talents in music. They decided to work together. From there, the music capabilities boomed, and they decided to take the train station on the surface (the one that we take at the beginning of Splatoon 3) all the way to the Splatlands. Because of this, Mr. Grizz discovered that Dedf1sh's not a normal octopus. After further research and persuasion (kidnapping), she was forced to continue to make music to play in Alterna. Eventually, when Mr. Grizz was defeated, she went back to the city and started making music with Paruko again while they both worked part-time jobs at Hotlantis.
If Splatoon has taught me anything, it's that being infected with evil goop means you make really good music.

I think it's actually canon that she was captured by Octoplush and forced to make that track against her will, I'm not sure though
