    I was butchering on the farm ever since I was 6 'till my father sold it when I was 12. But I realise now we were cooking meat all wrong. We never smoked any meat, and we never boiled ribs beforehand. These tips are amazing! Thanks a bunch!

    You can even use your oven in the kitchen. I did that with a turkey a couple Thanksgivings ago, and a ham the next month for Christmas. All you need is a pan with a sort of grate that keeps the meat sitting above the pan, rather than on it. You soak woodchips in water over night (there are different flavours). You can do all your preparations with the meat the morning of your smoking or the night before while the woodchips soak, unless you are doing a preparation that takes a while. For the turkey, I used a dry rub, for the ham, I used a glaze that I mixed with whisky. I also poured the whisky over the ham and woodchips. Once you have the woodchips in the pan and the meat on the grate, you tin foil it over so that all the smoke gets concentrated on the meat, instead of filling your oven and house.

    This guy gets it. 💯 Grilling is equal parts art and science and yet highly individualized. All of his tips very helpful. I got into smoking over grilling certain meats in the last 2 years and I can use all the advice I can get.

    Im from the UK. Our BBQ culture consists of burned sausages and burgers. I bought a pit barrel cooker, got some mesquite and some wood chunks from an old oak whiskey barrel; ive done pork ribs, chicken (spatchcock and halves), ribeye, sirloin steaks, whole duck, thors hammer, fish and prawns, various veg, eggs on the smoker. Its legitimetaly the best way to cook food, hands down.

    Great video! I smoke hamburgers (mostly venison burgers) all the time! Bring it to temp on the smoker and sear it on the cast iron with some butter! Amazing. Give it a try.

    I've smoked burgers before. They're actually pretty good! Especially when I use my burger press and fill them with cheese, sauces, onions, etc.

    No article or announcement on the video series yet, but I bet it's going to be great. Looks very promising. Although I started reading AoM for the philosophical aspect of it - for the manvotionals and essays about manhood - I find myself enjoying these laid back cooking videos just as nice and, most importantly, bringing me to my man-nirvana ;)

    Great video. I'm a chef as well and I love the fact that you tell us to experiment, mess up, see what works for you instead of telling what and how to cook with.

    "If you messed it up, so what you've learned" Thats exactly how I learned how to BBQ, nobody ever taught me, trial & error but keep trying till you get it right & I am still learning but love it. Started with gas grills & now smoking with wood. If you don't try you'll only cook the same ole shit.

    I was having trouble cleaning a barbecue yesterday. I mean really clean it, taking the cake off the sides and all. I tried three special clean your grill products and they did not work well at all. Do you have a video/article or can you make a video/article on it? I have a stainless steal gas grill.

      Put a light sprinkle of vinegar on the bbq and then use baking soda and coat the bbq, then let it rest for a day, then take and soak with plain white vinegar. Then use the bbq with "no food" just a single cook and repeat the wash above. This took out major cheese and honey coated bars on the bbq. Hope this is not three years too late.

    I just bought a Tera gear smoker at Maxi for only 130$. I made a smoked salmon and I'm really amazed!! The best I ever ate. If you guys want a decent one for cheap, they still sell them at Maxi in Montreal on Cremazie near Papineau. It works with propane gas (if you don't want to plug a propane gas tank to it you can start the fire manually). it's just a bit more job). For 130$ I'm really amazed.

    Have you ever heard of this.... I received a water smoker from Weber. I placed a whole chicken on for a 4-5 hour smoke. light smoke with applewood. the inside was nice a juicy and perfectly done. The outside ring tasted bitter. Well being the hog I am, I ate a lot of it. For the next three day I was doubled over in pain ... went to the dr... many test later I ended up with uclers from chemical burns from mouth to exit......5 years later I am now getting over last bit of healing...I can eat peppers again..... I havent used the smoker since but I think I am ready to fire it back up......what in your opinion could have caused this? Creasote is the first thought.....

      Gerald Davis im actually using a 14inch portable grill. 1/3 rack of rib with indirect fire. It's a squeeze but hey bbq for lunch, not going to complain haha. If you can somewhat control fire in a small grill, you'll get the hang of a regular sized smoker in no time. Stay smokey

    I personally think my method is the absolute best. I listen to my BBQ elders, try out their techniques, augmenting my methods with the best of what I learn.

      Burgers need to be cooked hot and fast, if you cook it low and slow it'll dry out

      Yeah, what the first reply said, also burgers are very thin (usually) pieces of meat, so while yes the smoke could penetrate the meat, you would barely if at all, taste the smoke flavor inside of the buns and or cheese and anything else you put on it.
      And no1 wants a dry smokey piece of meat lol, unless it's beef jerky 🤟

    Hello like your video have a question, I just brought me a kitchenaid grill from home depot and I'm getting ready for a cook out. So what is the best charcoal or lump should I use for low and slow, my brisket is around 15lbs and how many charcoal should I use plus I'm putting on some other meat to.

    okay its only going to be my first time smoking but I got some Cherry wood i was going to smoke baby back ribs. I was thinking about trying to keep it about 250 to 275 for 8 to 9hrs. Opinions on that time and temp?

    Can anyone tell me how long smoked meat lasts? I've read you can use this to preserve meat, but what do you do with it once it is smoked? Set it on the counter until ready to eat it two weeks later? That was a joke, but my question is serious, what do you do with it once it is smoked?
