I thought that the way the second fight with Zangetsu ends is similar to the way that the Julius Belmont fight in Aria of Sorrow ends- where Miriam and Soma both accuse the boss of not fighting at their full potential respectively- as both fights are testing the protagonists.
I don't think you have to limit yourself to just castlevania easter eggs, you can also point out easter eggs from other games in Bloodstained like how the Shovel Armor is a reference to Shovel Knight.
Another reference I think is the shovel armor that transforms Miriam into the shovel armor monster like the axe armor in other Castlevania games. Also the easter egg from SOTN when Alucard can fell asleep in a chair, and if he has the fairy familiar that fairy sings a lullaby, in bloodstained when Miriam sits on the piano at the center of a garden her fairy sings while she plays the piano.
Not to mention that if you stop moving or sit down long enough, the Carbossa familiar will get tired of hovering around and land on your shoulder, just like the Fairy Familiar from SotN.
5:07 I originally thought it was Trevor Belmont. Not only was CV3: Dracula's Curse a true name but theres also a boss fight where Alucard battles a zombie mimicking Trevor, Sypha and Grant. Not only that but Fake Sypha can summon a zombie Fake Trevor should you kill him first. Thats what i originally thought but i definitely see the relation to Simon looking at this.
The fight in the Millionare Room its also a reference, but thats a reference to Konami and its greed. And its the way IGA says that he prefers doing games then getting involved with pachinko (the current principal bussines for konami nowadays)
There are many, many references from Castlevania Aria/Dawn of sorrow, for example when you open the map seems kinda similar from Aria's one. The black panther is also reference to both games, the music of the entire game are also the same compositors from Dawn of sorrow. There are also many references from Potrait of ruin and order of ecclesia that I don't remember but I saw them when I played it when it came out.
This game is so SotN! It has everything that got me hooked into SotN and added bunch of more cool stuff and mechanics.. thank you for that video. I love it

His Character model and colouring is based on Zombie Trevor
The Familiar: Carabosse Shard is also a reference to the Faerie Familiar from Castlevania: Symphony of the Night. She even sings when you sit down at the piano in the Garden of Silence, much like the Faerie Familiar does when you idle too long in a chair in the Japanese and some of the English versions of SotN.
That game is entirely a huge Castlevania Easter Egg: it's literally a Castlevania game made by the same game developers, just without the copyright of being called "Castlevania".

There are more than a few JoJo references in Igavania games, though this one specifically did state the initials are for "Orlock Dracule'; which are obvious two vampire names from Castlevania. Could be a double-reference though.

i realize this is six months late but if you use the loadouts you can equip the sword while the familiar is still out. all you gotta do is set a loadout where the only thing that will change is your weapon, and equip the sword there. then equip the familiar regularly and swap to the loadout, and you will magically have both bloodbinder by your side and in your hands.
i'm still bothered that you didn't mention the first season jojo mask that turns people into vampire which is literally the foundation of castlevania's story (stone mask drop item)
the portal the revenant appears out of is also a reference to the portal the doppelgänger comes out of in SoTN

Plus O.D.'s ability to stop time and throw a bunch of ice "daggers" that resume their flight once time resumes.
The sword is the same if you use it you cant use the familiar just like the familiar in castlevania

Not sure what you mean. Castlevania came out in Japan before JoJo started. Stone Mask didn't show up as an equipable item until SotN.
