For the trick shots you need fast cloth, a bloody deliberate stroke and practice. Note that some of the players used a thick stiff shaft with a large hard tip ... such as a jump cue shaft. Some may also use a heavy cue ball that's less likely to loose momentum.
My hunch is that the 11 was placed at the edge of a divot in the cloth and the force of the stroke and cue ball landing vibrated the table a little and the 11 fell into the divot.

Kmuggle Slick conditions are also paramount. You can create these conditions with a generous coating of silicone spray on your cloth.
