      My mother says she would even eat the onion skins as not to waste anything and people would use old socks by boiling them and then drinking the water as a fortifying elixir. Big juicy meaty farts were preserved in jars

      everything they are doing seems perfectly normal to me. which part do you feel people will judge? the egg on the sandwich was nice touch. The pork with the beef, i hadn't though of that! totally neat to me

    I literally get a 500g pack of mince, divide it into 4, hand press the 4 lumps into patties, season and cook them on a grill pan until well done. Then I put it on a brioche bun, top with lettuce, red onion and smoked cheese and drizzle salad cream on top, then put the top bun on. Then eat.

      why did she add onion into the burger patties? In America we don't add minced onion in our burgers.

    It was Ross or Birds Eye burgers (shallow fried) for us then, with proper chip pan chips, egg and peas. Accompanied by a slice of white bread and butter, oh and dont forget the Daddies tomato ketchup. Yum.

    Paul Hollywood probably watched things like this as a child. Say what you want about him, but he always showed respect for and gave deference to Mary on GBBO.

    I've just had a dry aged beef burger tonight in a seeded bun with mozzarella cheese, garlic and some passata, and sweetcorn and salad, very nice too, but it did not look like these burnt flat offerings, I know it's the 70s, but as a kid in the early 80s I'd go to Wimpy occasionally or had them at home as a fun treat, and they didn't look like that😂

      I think even Mary would say she's not the best cook in the world but she wasn't there just because she was a bit posh. Before TV, she was trained first at Bath College of Home Economics, then moved to France to train at the Cordon Bleu. After that she worked as a development chef for some major brands, and became cookery editor for two national magazines. She says in her autobiography that she struggled to get comfortable on television for a long time. You're right that there was a bias for a cut-glass accent back then, which I'm glad is over, but at the same time frankly, an accent like hers was much clearer on an old fashioned tv set and analogue aerial signal.

      I always felt it was Mary that came off as cold and stiff in their interactions. Granted, this is one of the rare occasions were Judith isn’t as smiley and warm - but do watch more of their videos, usually Judith is upbeat and playful and Berry is just dry as toast. I suspect this was more about Britain culturally back then, we were a reserved society - now it’s all “t*ts and teeth” and an Americanisation of presenting style.

    This must have been early in Mary's run since she looks uncomfortable looking at the camera. At the closing she looks a bit pissed. The hamburgers looked really dry. The one with a sunny side egg on top is weird to me. I'm in U.S. and have never really seen that. I guess that is a "good morning burger".....🤣

    This felt more rushed than usual. I felt valuable seconds were lost watching her squeezing out sausage meat. I’d rather have seen her mixing and making the patties.

    It's fair to say our expectations of a burger these days has increased, thankfully. These were the sorriest, burned 'burgers' I've ever seen

      I don’t know how burned they are; it was hard to tell. But this was 1973, about the time the food prices are rising 20% per year. She made 2 ounce beef burgers and it was half sausage meat because beef was too expensive. That happened in America as well as Britain. I remember those times well. In my family we spent over a year, eating hotdogs and canned sauerkraut and nothing else for supper; it was cheap enough.

      The basic sausage meat is made from minced pork, pork fat, breadcrumbs, seasonings.

      The sausage meat here is nothing like hot dog meat. Hot dogs also taste completely different from this sausage meat. If you love your hot dogs, you would probably find this sausage meat rather bland as it doesn't contain the many flavourings, spices, colours, sugar and that salty, smokey processed taste that hot dogs have to offer. The sausage meat in this video will taste a bit salty, but that's it really.
      You could add your own herbs and spices to give it more flavour.

    Never use chuck, greasy. forget the sausage altogether. sirloin is perfect, with Worchester.

      I don't think Mrs Berry needs to worry about the price of meat in 2024. 😅 Yes burgers taste much better fried in a pan. 👍

      If I’m remembering right, around that time food prices are rising about 25% per year. It’s not as bad now. Although thanks to the politicians we are getting there.
