- 「回想在八十年代在餐廳工作時,經常要煮星洲炒米,有天炒到悶時就嘗試這個另類炒法。除了好玩,我覺得味道與層次都提升了。」名廚Ricky笑說。
首先灼米粉,將米粉放進滾水中,下些少油在水中之後便可熄火。下油除了保持水溫,亦有助米粉撈起時,因表層沾了油而變得鬆散。
跟著放入所有配料(韮王及銀芽除外) ,爆香黃薑粉及咖喱粉,再加入米粉,除了下基本調味,還有至愛的冠益華記桂林辣椒醬。這時才放下韮王、銀芽及蝦肉。待米粉煎香之後,便將雞蛋打進米粉旁,再輕煎一下,便大功告成。
「這是我自己喜歡的吃法,上面是正常的星洲炒米,但是加了一些滑滑的蛋,下層還有煎到金黃香脆的煎米粉底,一口吃下去,層次豐富,味道又香又辣。」他滿足地說。
星洲炒米
Singaporean Fried Rice Vermicelli
材料 (Ingredients):
米粉 (天鵝牌) 100克
Rice Vermicelli (Swan brand)100g
洋蔥, 切絲 40克
Onion, sliced 40g
紅椒絲 12克
Red chilli 12g
青椒絲 25克
Green pepper 25g
蔥 15 克
Scallion, sliced 15g
韮王 30克
Yellow chive 30g
銀芽 60克
Bean sprout 60g
叉燒 40克
BBQ pork 40g
蝦 90克
Shrimp 90g
雞蛋 2隻
Egg 2pcs
黃薑粉 2克
Turmeric powder 2g
咖喱粉2克
Curry powder 2g
辣椒醬 5克
Chilli sauce 5g

好特別 由其是最後放兩隻蛋落去 我估口感比普通星洲炒米易入口和滑. 我食過好多星洲炒味死辣無層次, 最後放辣粉之後兜兩兜後 辣味分佈得唔平均. THX RICKY SAN~

As someone who loves Singapore mei fun, I know I would love this version. The way the ring of eggs is added to the finished mound of noodles and the slight sear and crispiness on the bottom are inspired.

炒粉麵,我喜歡將淨粉麵切底炒渾一次,盛起備用,將料頭爆好後才加入粉麵再炒,這樣不會將粉麵越炒越爛,夾口一些,粉麭夠熱。
真正煑食師傅,快靚正,無多餘動作。
I am familiar with the curry version when i studied in Australia..haha..but in Singapore, we actually don't have this version. The ones available at our local coffeeshop is white with no curry powder.
HA HA...... I knew about it from a hard experience. Many years ago, I visited Singapore and ordered Singapore Rice Noodle. The waiter served the dish. The noodle was in WHITE, not yellow. I immediately told him that he placed a wrong order. I said I wanted the Singapore rice noodle which should look YELLOW, not white. He blew his TOP. He looked at me with his eyes wide open and said the following:
" The original Singapore Rice Noodle does not use CURRY. YOU, the HONG KONG people picked up those cooking habit from those INDIAN living in HK and added CURRY into everything you eat !!!! " He looked like he was going to kill me !!!.. OH , my god, quietly I ate the white noodle and I actually liked it very much. Since that time, from time to time, I cooked Singapore rice noodle without using CURRY .
there’s no such thing as a 星洲炒米 so there’s also no such thing as 正宗. as long as you’re happy can lah.

感謝 Ricky 師傅分享! 居新加坡港人表示,好懷念、勁想食!因為星加坡係無星洲炒米的 😮💨 呢度係有一般本地味精炒米粉,特色既話有本地印度白米粉但係加黃糖落去食 😨 我都係落街食碗叻沙算把啦
所以尼个星洲炒米并唔系真正嘅星洲炒米,其实尼碟野原名系星米,因为新加坡过后名气大增所以先用咗星洲,以前叫星米系因为重庆大厦嘅'星味'炒米粉,既系印度阿星炒米粉,所以先会有咖喱味,马来西亚同新加坡都唔会用咖喱粉黎炒嘅,我地嘅星洲炒米系用番茄蚝油炒或者英国辣醋黎炒,系新加坡可以去大排档试下星洲炒米,鱼露炒米,咸鱼炒米都唔错嘅
