Chao Ga & Goi Ga Using Rotisserie Chicken (Chicken Porridge)

  • Here's my instructional video on how to make Chao Ga and Goi Ga using the rotisserie chicken hack! This method definitely saves you time, it's affordable and still ultra tasty. I love eating this for breakfast, lunch or dinner...it's the ultimate comfort food.
    Ingredients:
    For the porridge:
    1 rotisserie chicken (I used the Costco chicken)
    1 cup of rice
    12 cups of water
    2 shallots
    1 onion
    3 green onions cut in quarter lengths
    1 tbsp fish sauce
    1 tbsp chicken powder
    1 tbsp salt
    Salad:
    Thinly sliced red and green cabbage
    Thinly sliced onion
    Chopped rau ram or Vietnamese coriander
    Fried shallots
    1 tsp sugar
    1 tsp vinegar
    Fish Sauce dressing:
    1 tbsp fish sauce
    1 tbsp sugar
    2 tbsp water
    1 tbsp minced garlic
    1 chopped chili (optional)
    Garnish: chopped green onions, cilantro and fried shallots
    Instructions:
    1. Soak rice in water for 30 minutes
    2. Debone the chicken
    3. In a pot add the chicken bones, 12 cups of water, 1 onion and 2 shallots. Bring to a boil then reduce heat to medium high and cook for 15 minutes.
    4. Remove only the chicken bones and add in your rice grains and green onions. Continue to cook on medium high for 15 minutes or until porridge is at the consistency you like. I prefer mine not too thick and a bit more on the watery side. Occasionally stir the pot to avoid the rice from sticking to the bottom.
    5. Season to taste and add 1 tbsp fish sauce, 1 tbsp salt and 1 tbsp chicken stock powder. Add more if needed. And your porridge is done! Garnish with green onions, cilantro, black pepper and fried shallots.
    6. While your porridge is cooking you can prepare your salad. Mix all of the fish sauce ingredients together. Thinly slice the onion and soak it in ice water with 1 tsp sugar and 1 tsp vinegar for 10 minutes. Chop your cabbage, vietnamese coriander and shred the chicken. Mix all the ingredients together in a bowl/plate and garnish with fried shallots.
