Great content, thank you for the timely video & recipe!
I made this for lunch today, and we (2 adults & 2 kids) absolutely loved it! Chicken came out so tender. I did not have any limes on hand but squeezed some lemon juice after it was cooked. Worked well as well. Thank you for the recipe! Will definitely cook this again for an easy go-to lunch or dinner.
I love hearing you enjoyed! Thanks for sharing

You are so welcome. Glad you enjoyed
Looks scrumptious!!!👍👍👍
It is! I hope you try it!
Fantastic!!! This is great I am going to make this for my family! I think they will all like it. Your clear presentation makes it look so easy. I also make UA-cam videos and I feel so lucky to be able to learn from other talented creators like you! I look forward to watching your future videos!
Thanks so much 😊
I tried this last night. It was a tremendous hit!
What I did, is put the food in an edible bowl.
So incredibly easy to make.
Thank you so much for this recipe.
Fantastic! Thrilled to hear you enjoyed!
I just made this as described minus the jalapeño (because I didn't have one). I also forgot to rinse the rice but that's ok, I like it sticky. The finished pot was ok, but i felt it was missing something so I added a 10 oz. can of green enchilada sauce to the finished rice and mixed it up. It tasted much better so I think that adding the green sauce before cooking would work well. Also, I felt it needed some vegetables so I added some cooked frozen mixed vegetables (which I had on hand.) For more zing, I added some guacamole salsa to the finished plate. Thanks!
Sounds delicious!
Hello, I cooked it for dinner but I didn't add the jalapeños, I put 2 sweet peppers and the black beans I didn't remove the juice and it was delicious! My husband liked it very much, he had to repeat it, we ate it with chips. Thanks for your recipe!
You bet! So happy you both enjoyed, and thanks for sharing your modifications.
See. I knew it. Been watching these cool cook shows all night and when I got up.
First time tips on white rice meat beans letting pressure release on its own.
Thanks. Great 👍 tips.
Hope the intstaP is available/in-stock. Haha
You did know it ;) Makes a HUGE HUGE difference.
Thank you for this video and recipe! I made the Chicken Burrito bowl recipe and it was great though one thing i am changing is I will keep the rice and cheese separated to give me the option to control the portion of rice and cheese. Great tasting dish!
So happy to hear you enjoyed! Thanks for sharing!
Awesome video! I love how detailed you are. Question :What if I wanted to put in another pound of chicken and twice as much rice. What would I set the timer too ?
You would need to double the entire recipe, keeping in mind that you never want to fill your inner pot more than 2/3rd of the way full when cooking a starch. Keep the cooking time the same, but it will take longer to reach pressure and for pressure to release.
Loving your recipes! I made the Buffalo chicken dip last night using Franks Extra Hot sauce. Wife LOVED it! Next up, tacos!
I absolutely LOVE hearing this!
This recipe is so delicious, I have tried and now I’m recommending it to my brother who is a busy bee
Thank you so much 😃I hope your brother enjoys it as well.
I'm going to try this with basmati rice (I have to watch my carbs). This looks amazing!
I hope you enjoy, but basmati rice has just as many carbs as regular rice. If you mean using brown basmati to add fiber and balance out carbs--that I totally get :)
awesome
This looks yummy!!!!! 😃👩🍳👩🎤💪
So good! I hope you give it a try!
Hi Kristin! I have been watching for quite some time and made several of your recipes. All were winners. So it's high time I said thank you for sharing your blessings with us. I have chronic issues also so I know what it's like to never know how each day will go. Tonight I made four pounds of chicken breasts using pineapple juice as you suggested. I am shredding them and portioning for future meals. Big difference in tenderness and hubby was impressed! For this burrito bowl, I know you said the chicken could be omitted. I plan to make this without chicken then add it in after the cook time, along with the cheese. So do I need to make any adjustments in the other ingredients? Thank you again for your videos. God Bless!! xoxo Claudia
Thank you Claudia so very much for your kind words. It blesses me so much to know that you are enjoying my recipes so much. As for the burrito bowl, you can make this without any adjustments and add in the chicken and cheese at the end. I hope you enjoy! And hang in there--dealing with chronic issues can be so hard. Sending you love and prayers.
Looks delicious! Was that cilantro you added at the end?
Yes it was! I hope you enjoy
Is the white rice minute and is it raw or cooked bf adding ?
This is long-grain white rice and it is not cooked before adding :)
Wow thanks mom
Most welcome
What do you mean natural release? Do you leave it seated until the presser is gone? Or can you open the vent?
Hey there! Natural release means to leave it sealed until the pressure is gone. Quick release is to open the vent. For this recipe, don't open the vent for at least 10-15 minutes.
Hi, are the beans Raw when you add them in the instant pot? In our country we don’t usually buy cooked canned beans or tomatoes.
Hi there! The beans are cooked. You can follow my recipe for cooking dried beans first: amindfullmom.com/instant-pot-beans/
Love this recipe..I also hope you continue to feel well I'm not sure what you're medical problem is but I will pray for you
Thank you so much Joe! I have Cystic Fibrosis. While there is no cure, I am feeling quite well at the moment by the grace of God.
@@AMindFullMom thanks for sharing that and I said a prayer for you at church today
@@jaytracks I appreciate that so much!
If I wanted to double up on all ingredients for meal prep, would I cook it for longer?
Hey there! Keep the cooking time the same, just keep in mind it will take longer to come to pressure and for pressure to release.
How will this change if I use long grain brown rice
Hey there! I don't recommend brown rice for this recipe, as it needs to cook for 22 minutes on high pressure. In that time, the chicken will overcook. Doable, just keep that in mind :)
How would you recommend modifying this if I wanted to do brown rice? Is there a way to make it possible?
Hi Julia! The chicken would likely get overcooked as brown rice needs 22 minutes on high pressure. You can certainly do that, but the chicken could turn out tough. I would maybe try this recipe WITHOUT the chicken or stir in cooked chicken after pressure cooking.
Another option, you could probably do it with frozen chicken since it takes about the same amount of time to cook as brown rice
Would skipping the beans change the cooking time, or have any other impact? (I have a family member who doesn't like beans.)
No change needed :)
To let it natural release do you have to do anything or do you just leave it? And it will go automatically
Just let it be and the lid will eventually unlock on its own (and the valve float down if your model has one)
I only have frozen chicken breasts. Would the cook time differ? Great recipe!
Hey Sierra! For this recipe to work right, the chicken should be defrosted fully (or the rice will overcook) I would suggest placing your chicken in a bowl of cold water in the fridge to speed up defrosting and then you should be good to go!
Can I do this without an instant pot? Would I just have to cook it longer?
Hi there! Yes! You can make this without an instant pot, but you would need to change the timing and the amount of liquid used. I would saute the chicken, onion, and jalapeno, and seasonings as directed. Add in 3 and 3/4th cups of chicken broth and rotel tomatoes and bring to a boil. Stir in 2 cups of rice and reduce to a simmer. Simmer as package of rice directs. Once the rice is cooked, add the beans, corn, and cheese and fluff with a fork. Finish with juice of a lime. Enjoy!
Lol i might need an insta pot tutorial still turned out great after 3 attempts to pressure cook
Well, I am glad you enjoyed the recipe. Here is a great place to get started on learning to use the Instant Pot: ua-cam.com/video/GsX0XoGbb3c/v-deo.html That video should help! But reach out with questions anytime!
Don’t give up, Rafik, I learned at age 73. Well worth my time and Thank God for You Tube.
Mine came out mushy and under seasoned. I like the idea the guy had about adding the enchilada sauce.
Can I ask if you added the seasoning recommend and if you added anything in addition to the broth?
A chef on the "good dish" show says the #1tip do not rinse rise!
I NVR rinse mine n it turns out gud evrytime! Js😉
I have found in the Instant Pot it becomes gummy if you don't rinse. But thanks for sharing your experience.
I wonder if adding come cooked brown rice to the pot in place of uncooked white rice will work?
It won't absorb the water, so I don't think this would work unfornately.
Can I add frozen corn to the recipe?
Yes you can!
is this rice mushy?
I don't find it to be mushy. The key is to use RINSED rice and natural pressure release :)
I just cook the cut chicken in the instant pot from raw and it comes out fully cooked each time
Thanks for sharing Nicky!
Could I double this or even cook more? I feed an army!!.😳
Hi Cathy! You can double this recipe. Keep the cooking time the same (it will take longer to come to pressure) Enjoy!
So basically if you wanted to use brown rice, just don’t sauté the chicken and it won’t be overcooked since the brown rice will take 22 minutes in the instant pot. Right?
Even not sauteed, the chicken will cook much faster than 22 minutes. It is doable, but the chicken will be well cooked.
Your rice looked like it was already cooked when it went in.
I promise you it was not. But it was rinsed.
@@AMindFullMom OK. Thanks. I thought it was, so cooked it first. Had a terrible time with the burn warning.
Oh yes, cooked rice would do that. Sorry about that. @@RR-hm2qj
Tried this. We made the mistake of doing extra chicken (extra water content so it came out much mushier) which is our fault, but my goodness. Criminally underseasoned that. Other than that, pretty good!
