    I have just cooked beef burgers for the first time, using your recipe. I worked for McDonalds for 5years and never ate anything as good as that. I have followed many of your recipes and always got a good result. Many many thanks.

      Sorry about that Mike, I don't think there's any way of telling who has subbed and who hasn't here on UA-cam.
      When you try the baguettes Mike, (it's easy by the way) follow these 4 simple rules and you wont go wrong, you'll already know about number 4 on the list, being familiar with my sandwich bread, let me know how you get on when you try it, bet you surprise yourself ;o)
      1. Stick to the recipe rigidly, the quantities and ingredients are very important for successful results.
      2. Use SCALES for the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate.
      3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is not strong enough for making bread.
      4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here ua-cam.com/video/HWpSbYV96_c/v-deo.html

      I know. I don't even look at other channels anymore. He's got everything I need. In fact, I just made his sandwich bread and fried potatoes for dinner. Wife is making her homemade chicken salad and egg salad for the bread. Yummy.

      Thanks again Gary, I hope your girlfriend enjoys the burgers as much as my wife does, she's on a keto diet at the moment so I'm churning these and her favourite chicken kebabs out by the dozen :o). Tell her from me Mark she doesn't have to add spices and stuff, just meat, eggs, onions, and salt will produce a very nice McDon tasting burger, (can't say the full name, copyright stuff :o).

    1 of the best lessons I've learned from cooking in a real sm. space is 2 clean as u go - its a wonderful idea especially since some "comfort food" makes us so tired or content after we eat it - who want 2 clean after we've cooked n eaten o fantastic meal? My cooking space is a bit bigger now yet I've learned 2 keep the same habit I used back in the day - it keeps cooking a pleasure 4 me : )

    Hi John, I went out and bought one of your little food processors and its been great. I use it most days, not just for garlic, onions, etc but I use it to blend sugar and zests for all my baking. It makes the best lemon sugar ❤

    Just a quick easy tip. You can peel the onion and grate it instead. That’s what I do for my meat loaf. Even quicker clean up which is always a plus lol

    Next shopping trip I'll get the ingredients for these burgers, they look wonderful. I do make my own charcoal from old wood. It's completely different to the brickettes, and costs me nothing. It lights easily, just some old bits of discarded kitchen roll and some twigs and the charcoal is alight quickly. My Thai wife's mum cooks on nothing else.

    Wanted to say these burgers are the best i made them
    yesterday with the cube and it was delicious, juicy and definitely tasty . Only thing i did was add 2 tsp of breadcrumbs . 👍

    Can I have the make off your mini chopper this is definitely on the cards for next week could I use pork mince or turkey instead of beef mince and would you say about a 20 percent meat as apose to 5 per cent one xx

The problem I've got with that is cheesemaking takes all to make and film, and I mentioned a few months ago I am recovering from major surgery and I can't quite manage a full day on my feet at moment, but soon as I'm able: I'll be back on the horse buddy, but untill then these more manageable recipes from our commercial kitchens will have to do😉

    Looks delicious!! How long can I keep these in the freezer? Can I grill them straight from frozen? What's the difference with adding breadcrumbs?

      Thanks again for watching Yusuf Chi, much appreciated, you can keep these in the freezer for up to 3 months, you must defrost before cooking, defrost overnight in the fridge.You can add breadcrumbs but they are meatier without.

    There is a question that has been running around in my mind for about a couple of years, now. ( Actually, there are two).
    When you ran your business, did you use large mixers which were the size of industrial machines?
    Also, are you mainly a baker or a chef?

    Hi John, made these and loved the flavour, just had a few problems. I thought they were too wet, I should have stopped mixing when I could feel the mix wasn't right, my fault. They broke up when being fried off, but will try again and maybe add some breadcrumbs or cut back on the wet items. Thanks

      The eggs will only bind the burgers together, did you follow the recipe ie, the same ingredients, weights etc, using scales.

      Did you use a machine to mix the ingredients? I have found hand mixing to be much more gentle, not breaking up the mince texture so much. And maybe less onion? Oops, I just noticed this conversation was four years ago but I'll leave my contribution here as I'm trying to be helpful.

    Hi john, had the burgers and baps during the week very tasty. Just one problem, although I followed your measurements the dough was a lot stickier than yours was so quite a bit of correcting was needed. Saying that they still turned out very well in the end.

      Sounds like you something wrong in the measurement Anne, did you weigh everything including the water.

      John Kirkwood hi john, I actually halved the measurements for both the burgers and buns, the only thing I can think of is the egg. I used a whole egg for the buns, I will try again this week and only add half the egg or one of our bantams eggs, if they will lay us one, and see how if that makes a difference. Had to have the mince onions and dumplings again last night! Mmmmm yummy. :-))

    Thanks! Your method of processing the add-ins looks like it made for some juicy grilled patties 😋 I'll try it tonight, have bits of ground elk, bison & beef, & meatloaf wasn't appealing in our current summer heatwave. Much better to cook outdoors (after the wasps go to bed)! Yum.

      @@JohnKirkwoodProFoodHomemade I made them and oh my, they are hands down the nicest homemade burgers I have ever made and hubby agreed! I was nervous about the chilli powder and nearly left it out but you can't taste it, it just seems to add to the deliciousness!
      They are so yummy and I have a freezer full now too 😋 woohoo

      Thanks again for watching Jason. Chicken or turkey burgers are a bit dry, but you can add a little pork fat, to juice them up a bit. Hope this helps Jason.

    Very interested in your burger video. I am surprised, though, that beef mince takes only 4 minutes each side to cook through, as I thought mince was a cheaper meat and therefore tougher. Seems like I have been doing it wrong for years.

    If you're doing this for a large family, say 5 - 6 people & only have 1 pan how to make sure all the burgers are equally hot and cheese melty when you serve?

      pop them on a baking tray. then put them in a low heated oven until you are ready to serve. 👍

    Hi John yesterday I made these burgers exactly how you said but they did not turn out good for me.
    Now it was my fault 2 small onions you said so I took 2 what classed as small apparently they were large onions so the taste was not good lol anyway I got 2leftt so I bought some more mince and going to spaghetti Bolognese.

      No problem mate. It's called mixed herbs in the UK but you can get exactly the same product under the name of "Italian seasoning" to be honest you can put in whatever herbs you like whether dried or fresh it's up to you, fresh Basil, Parsley, and Sage is especially nice in these burgers, please let me know how you get on with the recipe, and good luck with the burgers on Sunday ;o)
