For the Crust:
2 cups Almond Flour
¼ cup Powdered Sweetener
6 tbsp Unsalted Butter, melted
1 tsp Vanilla Extract
For the Filling:
4 (8 oz each) Packages of Full-Fat Cream Cheese, room temperature
2 cups Powdered Sweetener
4 Large Eggs, room temperature
8 oz. Sour Cream, room temperature
1 tbsp Vanilla Extract
Instructions:
1. Preparing the Crust:
a. Preheat oven to 325°F / 160°C and position the rack in the middle.
b. Mix almond flour, powdered sweetener, melted butter, and vanilla extract.
c. Press the mixture into a 9" springform pan and refrigerate for 20 minutes.
2. Preparing the Filling:
a. Beat room-temperature cream cheese until smooth.
b. On low speed, gradually add powdered sweetener, then the eggs, one at a time.
c. Mix in room temperature sour cream and vanilla extract until smooth.
3. Baking the Cheesecake:
a. Pour the filling over the crust and smooth the top.
b. Bake in the preheated oven for 50-55 minutes until the center is slightly jiggly.
c. Turn off the oven, slightly open the door, and cool the cheesecake inside for 1 hour.
d. After cooling, refrigerate uncovered for at least 6 hours or overnight.
4. Serving the Cheesecake:
a. Release the cheesecake from the springform pan and slice.
b. Serve with your choice of keto-friendly toppings and enjoy!

This was excellent! My first cheesecake. Be aware that the cake will rise, so leave room above it in the oven. I added sugar free preserves and strawberries sliced in half.
I tried this... ITS SO GOOD! When I say I love something, I mean it... and I LOVE this def recommend to try this!!! It’s fun too!
Quick comment/inquiry for you- this video says 5-8oz blocks of cream cheese and 5 eggs but your website recipe says 4-8oz blocks of cream cheese and 4 eggs. please clarify :)
Seems to be 1 Egg Per Block Of Cream Cheese... it explains its self :) Im actually making this recipe now,. with the 5 boxes of cheese

All good but it took me 1 1/2 hours to cook. Came out great, with pureed strawberries and or blueberries. Each day I had one or the other.

pureed Strawberries with some swerve and alsoade same but blueberries. There is also a good keto chocolate fudge sauce too.

You can . You use a lot less. If 1 cup almond flour, use 1/4 cup coconut flour.
How long should the cream cheese sit at room temperature?
R Caliber I let the cream cheese sit for about 20 minutes.

Why is that? You can use my coconut flour crust or even make a crustless keto cheesecake. So good!
