I love switching up the fruit and flavor of cream too. Pro-tip for puff pastry: Score a border in addition to docking w/a fork, then roll ea. side of the border to create a crust. So that after you take it out, you can cut the scoring and push it in the top to make a deeper crevice to hold more cream and fruit.

Definitely freeze/refrigerate them and only take em out when you’re about to go so the cream filling won’t melt. You could separate each tart with the piece of parchment paper!
Pretty sure you can use any jam you want or skip that part and just have the cream cheese filling on it's own or you could add some lemon zest or maybe another flavouring like almond extract

It's store bought in the frozen area, Pepperidge Farm Puff Pastry frozen dough, comes in sheets, the ingredients are on the box I suppose :)
