    Steam Sandesh is a novel way of cooking food using steam in Indian cuisine.     Ingredients:
    • Fresh chhena (cottage cheese) from 2 ltr milk
    • Sugar or jaggery ½ cup
    • Cardamom 3 to 4
    • Saffron (optional)
    • Nuts for garnishing (optional)
    • Vinegar 2 tbsp
    • Milk ½ cup
    • Ghee ½ tsp
    Preparation:
    1. Making Chhena: Boil milk and curdle it using lemon juice or vinegar. Strain the curds through a muslin cloth and let the whey drain out to get fresh chhena. Wash it thoroughly with water 2 to 3 times
    2. Mixing: Grind sugar , cardamom, chhena to a smooth consistency along with milk.
    3. Shaping: Pour the batter to a greased pan. Sprinkle some saffron on the top.
    4. Steaming: Place the pan in a steamer or in a covered container over boiling water. Steam for about 30 minutes.
    5. Cooling: Allow the steamed Sandesh to cool. Garnish with nuts if desired.
    Characteristics:
    • Texture: Smooth and slightly firm due to the steaming process.
    • Flavor: Delicate and mildly sweet with the fragrance of cardamom and saffron.
    • Nutritional Value: High in protein due to the chhena, with moderate amounts of sugar.
    Serving:
    Steam Sandesh is often served as a dessert or a sweet snack. It is particularly popular during festivals and special occasions in Bengali households. It is enjoyed chilled or at room temperature.
