I love the ideas with the sanctuaries. It's nice foreshadowing. Also a good way to recycle some of my riddle ideas in there. Maby i let my party fight the coresponging creature of the gods, which after defeat turns into the little statue. They will hate fighting I’jin, that cute little fella.
I think that would be a good, flavorful direction. The challenge would be making it satisfying fight. A whole party against one creature is usually a foregone conclusion, there's just little chance a single enemy can keep up with the action economy. The easy answer is trying to outnumber the party with multiple monsters. You could also create some cool environmental challenges or even some minor lair actions - these sanctuaries certainly qualify as lairs. Lastly, what about a giant mutant, Godzilla-Almiraj? Go wild!
