    I have the same tuning plates and they work perfectly....yeah...the temp stays about 10 degrees from end to end if not sometimes right on from end to end... so I love em.....you gotta have them..

    I’m a complete newb at this. I bought my Oklahoma Joes Highland yesterday because it seemed like good quality for the price. Last night watched 6 hours of UA-cam videos. Bam spent an other 800 bucks today on mods and accessories from last nights learnings. I really didn’t see this coming 🤣🤣🤣🤣 it’s only day two.

    Apparently the manufacturers of the tuning plates listened to you and others. I bought the plates for my new OKJ Highland, and they fit perfectly. The angle is above the firebox bolts. Fit like a glove. I did grind the ends of the gussets so it would fit tight. Love your videos!!!

    As always, great video! I ordered a similar baffle plate from the same company. I did notice the gap you were talking about when i placed the plate up against the firebox side. as I was trouble shooting, it seemed to be using the corners of the triangles as the point (get it) of contention. Rather than cutting those off (which would have lowered the plate in the smoker) I bent the bottom of the plate in relation to the vertical side of the plate. When I set it in my smoker, there is about a 1/16th of an inch gap on the firebox side, near the middle. I pulled out my level and there is a small warp in metal, but it doesn't seem to do too much, so i'm not overly concerned at this point.
    Most of the mods I've done are after watching your channel. Keep up the great work!

    Great idea with cutting the holes to let the bolts pass through vs. drilling a hole and securing the plate via the nuts. Much easier to get out and clean

    This is definitely a must have for the Highland. I assemble mine outside the smoker and just installed it as one piece but I have the older version smoker.

    I was installing my plates and the bolt heads are in the firebox and the threads/nuts are not allowing the plate to go flush so I will turn them(the bolts) around and take a closer look. Thanks for explaining how these go in! These plates are thick gauge steel and look real functional! Can't wait to get that first Brisket smoking!

    Dang, I just ordered baffle plates today from Island Outdoor, LCC for my Highland and didn't know I had to drill more holes..Maybe it'll sit up higher missing those bolt heads securing the firebox...Thanks for all your info..you've been a great help !

      I'd wait. I have a feeling that the Highland has 'variations' when it's built, so those bolts may be out of the way for yours.

      I gave this smoker to a buddy last year when I got my Lone Star Grillz but that tuning plate was the best upgrade I did by far 👍

    I have a Brinkman Trailmaster Limited Edition that I converted into a RF. It works well, but if I would have got one of those damn baffles for it, I would have saved a ton of time and tinkering. Makes me wonder why they are not standard with the smokers since the things are almost unusable without them. Enough with my rambling, another great video!

    Hello Ry, I just received my buffer plate. Again, I am a newbie. I purchased the O J Highland and made/bought all the modifications you recommended. I seasoned the smoker and tested the cooking temps. Everything is working just fine. Thanks again for all your videos! Regarding the baffle plate, just a few points and then a question: I called the BBQSmokerMods folks today. They are very nice and helpful. They explained that they have redesigned the baffle plate a bit and that there are currently no UA-cam videos that are up to date. First, they commented that they no longer have any tab piece with bolts designed to attached the two plates together. Instead they have redesigned one of the buffer plates with an edge or ramp, such that one plate just sort of overlaps onto the other plate. So there are no nuts and bolts or tab provided for attaching the two plates together. This seems to make sense since your video here explains why there is really no need for the two plates to be attached anyway (good call). Second, they insist that the baffle plate is not intended to fit flush against the cooking chamber wall (on the firebox side). They say it is not necessary to fabricate or drill holes in the cooking chamber box just to get a flush fit between buffer plate and the chamber wall. I asked about the potential for smoke to travel upwards, instead of downward, across and back up through the holes in the baffle plates. Their response was that the buffer plate was thoroughly tested and not designed for 100% of the smoke to travel down into the smoker and only rise up through the buffer plate holes. He said that there should be some airflow between the edge of the buffer plate and the edge of the smoker for sufficient distribution of smoke above and below the cooking surface, not just below; while still maintaining even temperature across the chamber. I guess that makes sense, but I don't know if you think so? For now, I am just going to try the buffer plate without drilling into my smoker, mainly because I do not have the expertise for that. There is some definitely space between the edge of the buffer plate and the chamber wall next to the firebox. Nonetheless, I hope to get the even temperatures that you get with your buffer plate and mods. My second question is...does your buffer plate extend all the way across the entirety of the smoking chamber, or is there space on the left side of the cooking chamber where the buffer plate does not extend? Is that a concern? Is that okay? Does that effect where you put your meat? Have you tested the temperature on that extreme left side of the cooking chamger opposite firebox? Thanks again. I cannot wait for my first smoke this weekend. I am smoking a while chicken! I really appreciate all your videos!

      Interesting about the gap they say should be there. I prefer it to be more flush but as long as it works, no problem :) And there is a gap to the left side which is normal. That’s right about where I usually have my water pans and they slowly boil away over the length if the cook :)

    Ry, I am concidering purchasing a Highland offest. I have the ablility to turn this into a Reverse Flow. Would you recommend doing this if I end up purchasing the baffle plates. Thanks in advance. By the way I have been watching your channel for several weeks now, and subscribed. You, have been an inspiration. I grew up in Texas and since moving away have not had any Good BBQ. I spent all day last Sunday smoking a pork butt, and about 4 hours smoking a bacon wrapped pork loin. My wife, from MN said she had never enjoyed BBQ as much. Thanks for all you do and keep putting out those great Videos.

      Hey, thanks for watching. My whole extended family on my side is from Minnesota. My parents' idea of BBQ was incinerating a rack of spare ribs over charcoal ;) If you've got a reverse flow, you won't really need the baffle plates because I believe it has a built in system to distribute the smoke below the meat to the far end of the cook chamber before allowing it to rise and make its way back toward the smoke stack.

    I think the gap between the baffle plate and firebox is there by design.

      Not from the installations I've seen before. Plus being flush I get very good temps across the entire cooking chamber.

      If you have to cut off the corners of the triangles and drill holes for the two firebox bolts that would make me question the product. I just received mine and haven’t used it yet so I will find out soon if the gap is an issue but I suspect from a balance

      I just look at it as if that gap is there you have an avenue for all that heat and smoke you're trying to distribute to now go up and over the meat without the control of holes in the plate which increase in size as they move toward the smokestack. I've heard from others that older models of the Joe were slightly different in some respects as to build quality, so I wonder if the bolt pattern was slightly lower then to clear the sloping end of the baffle plate :)

      I received my Highland as a gift already assembled. The two top bolts holding the firebox were installed with the thread protruding into the firebox past the nuts. After removing the two nuts and bolts and turning them around (bolt head only in main chamber) the fit was flush.

    Ry! Good stuff as always. Regarding the temperature, I generally see you with a digital thermometer resting Inside Across The grate, and of course the other two that are on the outside. If the Digital One Reads 265, WHat Are The Outer Two Generally Reporting left to right? Sorry For issues With Typing On my new tablet.

      The upper ones usually run about 25 degrees hotter than grate level, which makes sense with heat rising. Left is a little lower than right, maybe 20 degrees hotter than grate level.I rely on that digital thermometer almost exclusively.

    Do ya rekon that you might be able to use the main chamber as a grill with charcoal on top of the baffles?

      It might be a little restrictive on the airflow. I know they provide grates for charcoal grilling in the main chamber.

      The baffle plates came pre-drilled and I used a step drill bit to make the hole for the probe port :)

    Hey Ry, love your videos. Can you explain how to find and mark the points to drill for bolt clearance? I'm assembling my smoker right now, and just realized I can't get my plate to sit flush against the wall of the smoker without drilling. Nice piece of steel, but no instructions, no drill points, and two holes at the top of the tuning plate , but apparently I need to drill the cooking chamber for them and provide my own lots too. @#&!

      If I remember correctly I used a square to measure from a reference point to the center of the bolts and transferred that to the baffle plate for drilling. Another way is to coat the end of the bolts heavily with a permanent market and slide the baffle plate against them to transfer the mark :)

    Does the baffle plate take away smoke/smoke flavor from the meat on long cooks, I’m concerned that if I’m burning a clean fire, I won’t get smoke flavor.

      Not at all. It just helps distribute the heat and smoke evenly.

      To get proper airflow beneath the baffle plates I think getting a good seal is important.

    Hi Ry! So my current "baffle plate" is Meatheads hack of wrapping the grill grates in foil. My issue is where the grates end, whatever food if placed over it usually Cooks really fast And sometimes it even Burns. So will this tuning plate help in preventing that issue? If you were to load your smoker with ribs, will they all cook fairly evenly? Or will firebox side still be hotter? Thanks!

      The firebox side is always a little hotter, but these baffle plates a thick steel so they do a pretty good job of evening out the temps. I have had great results with ribs. If they are small racks I sometimes will rotate them right to left if one seems to be cooking too fast, but that's more because of a hotter fire than planned :)

      Ok so I went ahead and ordered that baffle plate that you have. Did you have to up the charcoal/wood amount in order to keep the temps up? Did the pit overall take longer to come up to Temp? Thx!

      @@malvizar85 No, in fact I find that it keeps temps better with less fuel over the length of the cook since it tends to run more evenly :)

      I suppose it's possible, but I wouldn't. There's not much distance between the tuning plate and the cooking grate.

    After you installed that baffle plate , did you have a hard time keeping the temp high?.. ive read reveiws that claim you need to use a huge amount of fuel to keep a very high heat in your firbox. I guess the plate restricts airflow. Most other reviews were good.

      Never had that issue. All the baffle plate does is help distribute the heat more evenly across the cook chamber. I've been able to, when necessary, get it up to 300 F easily and maintain that, but 300 F is pretty high for smoking, and any high temp like that WILL require more fuel (wood) to maintain. I usually cook in the 225-250 F range. Almost never above 275 F.

      They look like they start at about 3/16 and progress to 1 1/4 inches over five rows.

    Hello Ry. Great video. I've had a few built that didn't work out so well. I can see why now. If you don't mind, can you tell me the exact dimensions of the the parts. I have my own welder and he can make one. I am interested in how thick it is, the length and width of each individual piece, the dimensions of the triangles, the degree angle the offset is, and the length and width of the piece on top of the angle.

      If you give me a few days I can pull it and check those, though I wouldn't recommend making the triangles. I'd have the main pieces fabricated and then measure for those once the plates are in. That way you won't have to cut and recut.

    What was the temperature difference before you started using the tuning plates? (I got a Highland a couple months ago and have been having trouble)

    Can you send post the dimensions, thickness, length, etc. Like the person below me I’m interested in building one for my highlander smoker. Thanks

      I don't actually have the dimensions anymore and I'm not planning to pull the plates out anytime soon. If I was a fabricator, I'd make cardboard templates and build my own. You can get a much better fit and choose your angles near the firebox side that way without having to notch out areas like I had to.
