- It may not look like it (or maybe it does), but this was one of the worst pastries I’ve ever made. The taste was bad, the texture was terrible, and I wasted a bunch of perfectly fine homegrown plums. Having said that, you’ll probably enjoy the video all the same. What a disaster!

Agreed. If I tried to freehand cut a dough like that to the correct size and shape my disaster would have started there.

If he had visualized and expected the awful tasting mess it apparently was, he wouldn't have tried making it. Try your lovely plums in a kuchen (but probably not whole); that's a dessert that can use the moisture.
@@cbranom7756 Quite right. Plums in a German Kuchen (cake) are usually halved and pitted, and make the juiciest, most delicious dessert imaginable.

Chef John's flop videos are hilarious too. I'll never forget his cauliflower oven fries recipe (which is on the sidebar of my feed right now). That's why I clicked on this one so fast. Now back to my Dr. Byram Bridle controversy video.

I'd eat it. More cream, or greek yoghurt. Every time my mom made plum jam I ate a few spoons before any sugar (or, last few years, sugar substitute) was added.

@@lancekoller5284 yes. Experts don't lose all of the time they spent learning and honing their craft because they tried something that didn't turn out great.
@@lancekoller5284 well yea. Part of learning is failure. The crux if the scientific method is proposition and experimentation. Hey can i make a tart using this method using this fruit? Proceeds to experiment. Results say no. Perfectly logical approach
I've been a member of this channel since "Perfect white rice" days. THIS is my favorite video ever.
My favorite of Chef John's "failing, with style", is the Nipples Of Venus video, where he bleeps out his explative, as the "stuff hits the fan", quite literally!
I laughed for five minutes straight and replay it when I need a laugh. 🤣

I revisit this video every once in a while; I adore how he continues the narration of a botched recipe with the same enthusiasm as a perfectly executed one

I would've served it in the pan without flipping it and called it a cobbler. It sure is a beautiful color! Sad that he messed up his first plums from his own trees!

Lesson learned: Don't mess with perfection.
This is why I love watching Chef John just as much for entertainment value as recipe value. He's not above showing off his mistakes and letting us know how *not* to cook something. My favorite part was actually him continuing to criticize the recipe while still finishing the whole thing. His momma must have taught him to clean his plate XD Thanks for keeping it real!

Such a shame it was your own plums! Failure's always the most painful when you put in the effort to make it special.

He hasn't tasted my mom's cooking.
I once made a batch of shortcakes that looked beautiful but were so bad I couldn't eat one even after piling on strawberries, cream, and sugar to disguise the taste. So I crumbled them up and threw them out on the lawn, and even the birds wouldn't touch them. (They were the result of a misguided bit of kitchen chemistry I tried because I was too lazy to go to the store when I found out I was out of baking powder. If anyone asks for details, I'll deny everything. Some things are best forgotten. But I'm sure Chef John would never have made such a mistake.)
I always simultaneously laugh and cry when chef john fails, but mostly I appreciate that failure is part of the learning (and living) process. I am sure I will need to remind myself of that as I continue to build a shed from the scrap lumber in my back yard

Thank you so much for showing that everyone makes mistakes, and that being an expert at something with literally thousands of hours of experiences does not exempt you from this rule. I usually don't skip any of Chef John's intros but today I did and until almost the very end I super excited to make this. At various steps I kept thinking - well this will be disaster but its chef John, he will fix it somehow. But then towards the end he talked about this being a disaster which he mentioned in the beginning. I then checked out the title and then went back to beginning and lo and behold. Suffice it to say, this video was quite the roller coaster ride. Accidentally or not this was a very enjoyable video to watch, even though the recipe was a disaster. Thank you Chef John. You are one of my fav YT chefs. Cheers!
That will be awesome after dehydrating the plums a bit :) This is a great recipe! Also, plum cordials are wonderful. Plums, honey and brandy and let it sit for a few months. I love when a great chef shares that they have bad days in the kitchen too. How else would anyone learn valuable lessons and create new amazing food? Thank you, Chef John, for being so humble and real with us all the time. You are one of my favorites by far!
My dad used to have a key chain with “get your gums around my plums” written on it. He and CJ would have gotten on.

Chef John, I wonder if you were to cut the plums in half first, pit them and macerate them in sugar, then try the tart experiment again to see if it helps. Also, make sure you let those plums get really ripe to make sure they are as sweet as can be. Or maybe try with nectarines or peaches next time.

Halving and pitting the plums wouldn't help - sadly - MAYBE peeling, but that still leaves the problem of far to much juice for a "Tarte Tatin". Peaches/nectarines/apricots might work at least flavourwise.
@@anjarasch8332 He did say that the fail was because it was too tart, not the juices.
@@76irodriguez too much juice is clearly to see - he also does mention it -. most of the tartness comes from the skin. All in all way too much effort to try to make it work, when there are many delicious plum receipes around - and the original (apple)Tart Tatin ;-)

It just goes to show that even a chef like yourself has the occasional fail in the kitchen. As long as we learn from it, in the long run we will be better Cooks.
I appreciate the fail videos as much as the good ones. It's still a teachable moment which is what I'm sure most of us subscribers are actually here for. I'm already thinking of ways to improve upon it for round 2.

I think it is very precious that you show us when something doesn't come out as planned. It is not easy to admit it especially when you "you are a chef" and people assume everything you make is perfect.

Thank you for the video! My grandmother used to do a plum tart this way: dough, plums. That's it. Just remove the seed and place them open on the dough. She waited for the plums to be really mature, soft and very sweet.
I failed so many times. But the next time I cook it is incredibly better! Thank you for all those lessons. Cheers from France!

Step 1- slice, peel and pit the plums
Step 2- do everything else the same way
Step 3- Better fruit pie 🤗🥧💕
Would still be extremely juicy though, and the caramel would still be bitter. He'd have to reduce the liquid a lot longer, and maybe add water to the caramel instead of making a dry caramel so no bitter notes arise.
I think I'd take it one step further and cook a chunky compote/chutney with brown sugar and either cinnamon or cloves. Then it'd be a simple case of baking a puff pastry circle with a good layer of sugar for a caramel effect and serving that with the plums on top.
Maybe add some sweet condensed milk to the caramel to take care of the bitterness and marinate the plums in sugar or simple syrup before adding in the caramel? 🤔🤔 There's gotta be a way to fix this because the pie *looks* so yummy 🤗
@@shugarburke1987 If I'm not mistaken, plums don't have much pectin, so adding some pectin or making an apple and plum pastry would probably do the trick! After your suggestion of peeling and pitting the plums, of course!

It's funny how even in your past "failure" recipes, there was something redeeming about it and it was a matter of tweaking things to ensure success. This was the first time I've seen you admit complete defeat and say that this recipe was fundamentally flawed, and much respect for demonstrating to the home cook that even a complete bust isn't worth getting upset over.

Thank you for sharing your mishaps. I hold you and your recipes in the highest esteem and, as a pretty adept home cook, I occasionally suffer dishes that aren't what I'd hoped and imagined once created.
I am truly sorry that you wasted home grown plums. They look like Santa Rosa's, which are my favorites, and the last of my harvest is on my counter. I was so excited to watch such a pertinent foodwishes video and to try one of your recipes for my plums. Instead I had a good laugh at your expense, just because you're funny. I don't know much about tarts but this gave me an idea to try to combine this with a recipe for knedle that might work. Thanks for the idea chef john.
Hey, we live and learn. Waiting patiently for the 'new and improved" version as many cooks won't give up until they get it right. I've also made a fresh plum tart but I halved mine and baked it right side up with the flesh side facing up. That way, the plums didn't retain all their moisture and it turned out fantastic. I also baked it in a slower oven and I didn't attempt a tarte tatin for this very same fear of the fruit being too soggy. Thanks for sharing, that's one reason we love these videos.
