I live in a colder climate so they are typically treated as annuals here. I could try to over-winter them but it's a gamble as to whether they will survive. Thus, it's easier to sprout fresh plants each year.
Chayote is called cidra here in South America. I have to say, I don’t have to do anything for this to grow. It completes with my best weeds. Fast growth, zero maintenance. Maybe it likes the Andes mountains

So starting in May might not leave enough days to mature and fruit. You might have better chance if you start them early indoors to plant out after your last frost date in March/April. I live in a cool climate and start my plants indoors about 8 weeks before my last frost date so that they have a headstart and enough warm days to fruit.

I planted chayote last May& They just climbed even in good sunny weather in the Uk did not see even a blossom
