I made your crispy Greek lemon potatoes recipe last night. It was so good…all my 8 guests loved it! I made it on a large rimmed sheet pan and roasted it for ~2 hours. It was delicious! I will definitely make this again 😋. I love your recipes!
Great recipe, I use a third way which is a combination of the two. I add about a cup of chicken broth and a little less water so I still get a moderate amount of the lemony gravy. Potatoes still get a moderate crisp but more tender. Also, I add 1/2 teas of granulated chicken seasoning to the recipe which really makes the recipe pop! Love your channel!
I add chicken broth too. I love baked potatoes! I make them very often. A Greek salad and extra feta cheese aside, is heaven on earth! Of course you can do the same recipe with lamb, chicken, pork or bergers. Greetings from Greece 🇬🇷
Golden potatoes or any waxy potatoes are the most common grown and eaten in Greece, even for πατάτες τηγανητές. Russet are more common in the USA. I rarely can find russets in Greece unless I'm in Athens. Some of our local markets on Tinos (Sklavenitis, Synka) might carry a few russets but the waxy varieties are far more common. Waxy potatoes hold up better to boiling and won't crumble. That said the farmer's market only have the waxy varieties. A "life hackers" tip I learned working at a few different tavernas on our island many years ago. Boil the potatoes in the water and lemon juice first. Then cool for a bit add oil and herbs and bake in the oven for crispy potatoes. A key advantage of it keeps the kitchen and oven from turning into a humidifier ;)

When I roast potatoes, I use Cyprus potatoes, always cutting in half only but length ways, they are delicious. I do not par boil Cyprus potatoes, they don't need it.
