As a mechanical engineer and construction project manager; either fire your current PM, or hire a good one and quit trying to manage & direct the design and renovation work yourself. All these headaches, setbacks, changes, and added costs could have been easily avoided....
Certainly an element of trail and error here. Every decision was made with the best available information. But, sadly for me, the “best available” information has consistently been pretty terrible.

I'm in Texas, unfortunately on the other side of the state from you but if I'm ever out that way i will definitely see if you're around. It would be amazing to sit down with you and just pick your brain and enjoy a great smoke.
Sounds like the needed to Balance the HVAC system correctly. They control the air flow so it's even amounts of CFM coming out of the vents. The wrapping on your duct in your house is mostly to stop condensation from the air temperature difference from outside air vs the air inside your home.
Suggestion. You should still wrap / seal the room so that any areas of truss, stud or any other material is sealed up. The foam itself is pretty tight but the wood studs and joists can still absorb / release moisture. Plastic sheeting and the proper tape is cheap and easily applied.
my apologies, I added this comment before continuing with the video. The moisture resistant drywall will help. Make sure all the power receptacles and any other penetrations into the walls are sealed.
Great set-up Kirby. I use simple floor unit air purifiers and upgraded filters in the AC in the summer. During the cooler months its a window fan cross breeze. The humidor is going to be great- I would however reconsider the humidity level from 70 back down to 60-65.

As a contractor I can tell you for sure the worst words to hear are “while you’re here” but based on your explanation it seems those hvac issues were pretty minor but definitely needed attention to get things running to the best of their abilities glad your contractor is able to take care of it for you

As an electrical engineer who works in building services alongside mechanical engineers, it is the utmost importance that a house with the facilities that you're installing are looked at by a mechanical engineer. Still not too late, I would get your plans looked at by an engineer before everything is on its final install!

Kirby wants so many things at the same time, and he is right, he wants the room air conditioned, be cleaned, don’t pollute the rest of home, be quiet, energy efficient and budget friendly. Most of the contractors in this business (if not all) can probably satisfy him in 2 or 3 of his wishes. A mechanical engineer, subject matter expert in air conditioning can find a solution for most if not all.
Me: "this humidor holds 200 cigars. I would never fill that" Meanwhile, Kirby Allison probably debated whether or not 1200 sq ft would suffice for his humidor. Awesome vid!
As a foam sprayer myself i hope you know that all your timber will crumble away after a couple of years. So please be prepared to have to rebuild it all again in the very neir future.
A cigar room is planning in depth not to play golf. Simply because if you're friends are not on the course they can not try to include you! Egg crate vents are not terrible, but you may actually want hexagon defusion vents. They greatly reduce turbulence in airflow remaining very quiet even at high CFM. Cheers

Why not have the air inlets at the bottom of the corners of the room, near the floor, so that the path of the air flow is literally bottom-to-top?
Construction limitations. Dripping air vents down the walls would have added significant complexity and cost.
