    I went surf fishing before a scheduled guide trip I've had with some clients and the conditions were terrible! I end up having to cancel my trip but I stayed behind to fish and managed to catch one big black drum. I planned on doing a catch and cook, so here it is!

    One the best fish I have ever eaten......filet without scaling or skinning place the skin side down and grill over coals.....the skin and scales form a bowl when the edges curl up.....butter or oil with your favorite seasoning....just scoop the meat out hit it with a drop of lemon and wow it’s awesome.....a Cajun friend of mine taught me that.

    Lite grill med to moderate heat. Head and gut the fish. Do not scale. Put fish on grill, grill for about 12-15 mins on each side. The fish has it's natural pan, which are the scales. The meat stays moist and tender and cooks in it's own juices. Stick fork in dorsal fin and put back the meat. Top with your favorite toppings, ie.. salt, pepper, lemon, Old Bay, Cajun sauce. Enjoy!

    Nice catch. I live on the east coast of Florida in Amelia Island just north of Jacksonville. I surf fish in Amelia Island and St. Augustine. It is very rare to catch a Drum that big at the Beach in northeast Florida. But there are plenty at the Inlets and in the rivers. My friend caught a 13 pound Black Drum in the Intercoastal waterway one time.

    Buy some ceramic tiles from Home Depot and use them as a base for cooking fish. Works easy and the tiles are cheap....

    I like to take lemons and slice them up and line the grill with the slices with minced garlic and cook the fish on a lower heat

    Trim off the red meat and take off the skin and fry it in cornmeal. Add salt pepper lime YUM. Seeing your presentation off the grill that looks damn good too. You can for a side put peppers onion and red irish potatoes in foil with olive oil and seasoning. UUUMMM. Either way it's all Good!

    Next catch and cook try catfish...get an oak board, pre heat oven to 350, nail filet to board, season heavily, cook 30 minutes then scrape filet off into trash and eat the board. 😉

    Looks good to me so does your tree. Maybe scale the whole fish first? Can’t say for sure cause I’ve never caught one.

    Black Drum the scales make a mees. On Red Fish on the half shell you do not have the issue with the scales.

    Blacken and cook in olive oil. Add a little lemon juice at the end

    What I do is take the filets and wrap in tin foil with tabs of butter, garlic salt, pepper, Cajun seasoning, on the filets. With the filets wrapped in tin foil, put on grill or put in oven (375) for at least 10 minutes. It comes out like broiled fish.

      I have seen a hanging bracket, and even cargo cage, that goes in a receiver hitch used for hauling beach carts. But if hauling it inside you really need a rubber, molded, cargo pan to contain the sand!

    2 cups of all purpose flour, one tablespoon salt, and enough water to make it a little thinner than pancake batter. Dry the fillets with paper towels, then dredge fillets through the batter, and then roll in (Vigo) brand Italian bread crumbs with Romano cheese. I cook at about 320 degrees for about 3 1/2 minutes. This is also a great coating for fried shrimp as well.

    I caught a bull black drum yesterday and today I marinated it on lime, cajun & olive oil.
    Came out terrible! I noticed the meat shrank and had the texture of pig fat with a slight hint of amonia that i ended up throwing it in the trash. Im used to eating fish but this one I caught was too big for consumption. Its the same size you caught but im wondering as to why mine did not came out like yours did.
    When I was filleting the fish i noticed the meat was soft but i was thinking it will firm up like the meat from a red fish.
    Next time ill know better to just release the big ones. I had the small ones and those are good but for the big ones. Ill pass

    Always best to squeeze lemon juice AFTER you cook it. You'll get better use of the juice instead of cooking it off.

      Revolution Road I like to add lemon before and after. Adding before you cook gives a deeper citrus taste. I like the combo of both flavors

    Friend of mine had a great one we did the other day on a 28 inch red I caught. Lemon juice on the meat, softened butter all over the meat, slap ya momma seasoning, garlic and onion seasoning. Little louisiana hot sauce, orange slices on top. Put in an aluminum pan, cover. Put it on the grill at about 350 degrees for an hour. It was amazing.

    Cut into large strips make beer batter flour salt pepper in plastic bag drop in strips roll around till covers take out shake of flour dip in beer batter deep fry serve with French Fry's lemon wedges

    We caught a nice black drum last fall in Florida. First time eating it , grilled with old bay and lemon and was very tasty

    On the half shell is how I mostly prepare my redfish. The seasonings that I use are Lemon Pepper and Tony Chachere's Cajun seasoning. I use lemon pepper on any and all of my fish. One thing different that you did was to start flesh side down. Never tried that....usually just scale side down only. May have to try that. May help with larger fish. Fun video...…#staybummy

    as I learned in Landshark’s catch, clean, and cook, one can also just leave the worms and cook it all and they are totally harmless and basically disappear in the meat when cooked anyways. Furthermore they have no taste.

    Love the haircut - reminds me of the 80s. Of utmost importance is the use of a "hard lemon". You'll want a lemon that is sour and clean - not a sweet, soft lemon.

    I like the fact you guys do catch & cook videos. I think you have a "hook" other channels don't. Especially for all the different species you catch. Keep it up. (Just clean that rusty grill grate, before tossing a pretty fillet up there again!)

      Thanks! And I’m surprised you noticed! Lol you got any tips on how to get it off and keep it clean? These dang grates have had surface rust since the day we bought it. I can’t keep the rust off.

      @@BamaBeachBum .Yes. & your not alone! We have the same problem here at home in Ga. But, since your near the ocean air, I suspect it is an everyday battle.
      Give your grill a little extra time, to pre-heat. Crank up the heat to 500° for about 15 minutes. Then give it a quick scrub with a S.S. brush or wood scraper. This takes off almost all rust! Then as it is cooling down, Season the grates: spray the grill grate w/ some PAM, or mop a little olive oil on the grill.
      Cook food. If you can fire it up again, after dinner, it is easy to clean and re-season again. This is just like seasoning your cast iron skillet! Its not bad, once you get in the habit, and the grill stays cleaner, since it stays oiled.
