Western music has 7 modes. Arabic and Turkish music have Muqams, Persian music has Dastgaah system which is more complex than modes. In Persian music we have 7 "Dastgaah"s Segaah, Chahargah, Raast-Panjgaah, Shoor, Maahoor, Homayoon, Navaa and 5 "Avaz"s (Aboo-Ataa, Bayaat-Tork, Dashti, Afshasri which are extracted from Shoor and Bayaat-Isfahan which is extracted from Homayoon. Each of these 12 principles have many small branches and melodies called Goosheh that define on which degree to start a song, the emphasis note and sometimes the rhythm and the playing method. We have hundreds of those! By the way middle eastern music has microtones which makes even more complex. Persian music has 24 notes to play with instead of 12. Also it's not based on octaves, but tetrachords (sometime trichords or pantachords) which tile together and create various bases for a different Dastgaah, depending where you start. This system has been added to the Intangible Cultural Heritage Lists by UNESCO.
