- I love preparing Chile Verde the traditional my traditional way with jalapeños, serranos, and tomatillos, but I also love to prepare it using hatch chiles. It gives the chile verde a bold, rich flavor.

8-10 Hatch Chiles
4-5 Lbs Pork Shoulder
3 Tbsp Vegetable Oil
One Small White Onion
4-5 Garlic Cloves

What a great change of recipe for Chile Verde. I have always done the traditional way by using tomatillos, but recently I found that at my local grocery store, they are carrying fresh Hatch peppers. I will have to try this. Thank you so much for the work. Nice job
I see it this way,. Chile Verde is a tomatillo based dish. Green Chili is a Hatch/Anaheim chili based dish. They're both delicious, but very different.

My wife is a chef. When she comes home, and dinner is already cooked, she glows.
Wife taught me to use the air fryer to cook chilis for skin removal. It's the only method any more.

That’s a no no in New Mexico Cuisine it’s straight up Chile no citrus no Cilantro . It takes away the Chiles great flavor. You can do it be it’s really not the traditional way of our Green Chile
Do what flavors you like, make your own traditions. I never follow recipes or tradition. I cook what I like to eat.
I just roasted, peeled and froze 20lbs of hatch chili this week.
WOW! Do you freeze them and use them throughout the year?
I can’t even get hatch chili’s in Oregon. I always have to use Anaheim and hatch chili powder as substitute.

@@GilaMonster971 I know this is an old comment but there’s a company that ships New Mexico hatch Chiles. You can get them fresh or already roasted cleaned and chopped. The company is “the hatch chile store” I order from them regularly. Hope this helps.
