- In this video, I made strawberry shortcake.
You think 'oh you're not BEGINNER', but no, I don't know how to icing like some kind of bakery.
So in this video, I'll show you how I icing the cake, for not good at icing like me
Scraper literally changes my life. It makes I'm really good at icing the cake!
Please, follow my recipe. I highly recommend this. One of my favorite recipes in the past 5 years!
= INGREDIENTS =
• Genoise (high 15cm/6inch round pan)
3 eggs
120g(1/2cup plus 4tsp) sugar
120g(3/4cup plus 2Tbsp) pastry flour
Pinch of salt
5g(1tsp) vanilla extract
50g(3 1/2Tbsp) melted unsalted butter
• Simple Syrup
30g(2Tbsp) sugar
30g(2Tbsp) water
• Whipped Cream
600ml(2 1/2cups) heavy cream
60g(4Tbsp) sugar
Strawberries
-Genoise

1. In a bowl, put eggs and sugar. Using a double boiler, whip about 8~10min until fluffy. When water is boiling, turn off the heat and whip.
2. Add the sieved pastry flour, salt, and vanilla extract and mix until well combined.
3. In melted unsalted butter, put a dollop of the batter, and mix. Put it back to the batter and mix again.
4. Transfer the batter into the round pan. Tap it to get out air pockets, and bake 170C / 340F for 30~40min.
5. After fully chilled, slice the cake into 3 layers.
-Simple syrup
1. In a microwavable bowl, put sugar and water. Microwave and mix until all sugar are melted. Chill it in a room temp until use, or refrigerate up to 7~10 days.
-Assembly
1. Place one layer on a cake stand. Put the simple syrup with a brush or spoon, etc. Spread the thin layer of whipped cream evenly. Place halved strawberries on top. Spread whipped cream evenly, and place another layer of cake. Repeat with remaining layers.
2. Put the whipped cream in a piping bag, about 1/3~1/2cup.
3. Spread remaining frosting all over the top and side with spatula or scraper.
4. Pipe the whipped cream for decoration, and put some strawberries on top.
5. Refrigerate at least 30 min before slicing the cake.

@Leanne Johnson Pastry flour. Just how it sounds. Used for things such as biscuits, scones, pie crusts e.t.c. It has a *lower protein count* which makes it ideal for those baked goods, since it *means a lighter, flakier dough :]*

For anyone making the cake, I spent hours in the kitchen and did not have the special bakery flour, it will not rise as seen in the video, i ended up with two layers instead of 3 😅.. The part with the water boiling anf the mixing killed my arms, but I will not give up and try another time it looks so beautiful in the video (at least the taste of my cake is good ! 🥳🥳)

@@kaybrin2818 oh yeah, it was delicious! Getting the whipped cream to evenly spread out was a little tricky but it worked out. We kept it in the fridge and maybe it was because of the way we stored it, but the cake hardened a bit. But honestly in the end, it's completely fine👍

Hello I tired to make this cake twice but the cake batter after I added my butter had these brown lumps they were hard and I don’t know what I did wrong. I though my butter was to hit but even with it cooled down it still had these lumps.
when you make the cake do you need to use a double boiler? I dont have a hand mixer and only a standing mixer so i wont be able to whip it on the double boiler unless i hand whip it.
I did the recipe yesterday without double boiler because i just have standing mixer and it worked 😍👍🏼

@Destiny well she does have another video anyway. But I tried making it and it turned out extremely dense, you should check out some other recipes as (even though this is supposed to be for beginners lol) they are way less complicated and easy to follow.

Hi! I was wondering if I can substitute pastry flour with all purpose flour?
Yes, you can :) But I highly recommend to use cake flour or pastry flour.
You can also make DIY cake flour! Take 1 cup of all purpose flour, remove 2 tablespoons of flour. Then, add 2 tablespoons of cornstarch. Whisk the flour and cornstarch mixture for 2-3 minutes. I used this mixture for making this cake and it turned out great!

Instead of simple syrup, use strawberry syrup or strawberry jam. Add more strawberry flavors to the cake.

I made this cake last week for a small group of friends and it was a hit! I didn't have enough strawberries so I used mango for the second layer. The combination of strawberry, mango, and whipping cream was so good!! My mom wants me to make this same cake for her larger group of friends. How should I change the recipe to turn this into an 8-inch cake? Should I multiply the recipe by 1.5 or 1.3?
Update: I multiplied the recipe by 1.5. While adding in the flour and butter, I accidentally overmixed my batter which made it deflate. I didn't want to end up with a dense cake so I added 1.5 tsp baking powder. Thank God it turned out fluffy!

If you whip it for long enough it shouldn't unless its quite warm inside. I would recommend refrigerating though.

You mean while icing the cake? Mine didn't melt while icing the cake. But if you're not, i recommend put ice under the bowl whipped cream-bowl :)

Ohh i see. Mine didn't melt away,, so i'm not sure that will happen. But this made with 'cream', so i recommend less than 7days.
To stabilize your whipped cream, use powdered sugar. It already has some cornstarch in it, so when you add it, the cornstarch will help stabilize the whipped cream. If you want to go one step further, add about 8 oz of mascarpone cheese! It’s perfect for whipped cream frosting
