I work in Concierge, DO NOT listen to her comments on Carbone. They are extremely overhyped, overpriced and automatic bots take all reservations immediately when they are released. Not to mention, the staff are entitled and do not give you the service you see online. You can get better Italian at several other locations in New York. EDIT- This is specific to just the NYC location. Celebrity engagement ruined the restaurant in my opinion. They only provide high level service to those who are considered VIP clients. Unfortunately, the service lacks for the average person wanting to experience the restaurant!
This is the Las Vegas location. I would say they’re one of the better Italian spots on the Las Vegas strip. Now, I would agree that NY may have many other good spots as well. Such a large variety of Italian in the city!

Am I crazy for thinking that expensive meals should be able to fit in your mouth? Because I swear to god the amount of effort and frustration I will endure from cutting or biting into a singular crouton would make me feel the least sophisticated I’d ever felt in my life. Every time I go to an expensive meal, it feels like the chefs are saying “eating gracefully doesn’t exist. It’s a fantasy. You want a chopped salad? Here’s a leaf of romaine. You want toast? Here’s the hardest thickest bread you’ll ever find in your life. Say goodbye to the roof of your mouth and that stain-free blouse.”
I dont think i could handle all that. Give a quiet dark restaurant like ryans. Give someone money, go sit down until someone ask what to drink, eat like a fiend, and leave. You interact with 2 people, pay a small amount, and get a massive buffet to chose from. Thats my kinda vibe.

Please note that I said "supposed to be" so the way people make it now is probably incorrect (happens alot with old Recipes that still retain their original names but vastly differ from what they originally were) but Regardless of what people add it to it or changed (which honestly isn't a lot) The idea actually came from ancient Rome. I once saw Nicolas Cage at a restaurant at the Belagio... Las Vegas is actually kinda small, especially the Strip... so it's not too difficult to see celebrities...
The best Italian places in Italy aren’t even the hoity-toity, fancy, tourist spots, they’re the restaurants off the path that the tours take you on that are run by a dude and his 3 nephews. They don’t cost $3000 for a salad. They don’t have fancy athletics. They aren’t visited by celebrities. Just a nice little spot run by people who want to make good food. All of this to say that this restaurant here is the perfect example of the luxurization of the worlds culinary cultural staples
