Great question! Google sites is great because its always free, and I like that you're able to control when/how to share it fairly easily. I also like that there's a much smaller learning curve than Articulate Storyline 360. The cons are that there is pretty limited functionality/features. But I think if your course just calls for video, assessments, text, embedded content, etc., it's a great choice. Articulate Storyline 360 is great because it has significantly more interactive training elements and there are lots of companies that use it, so it is a great way to show off your skills with it. The biggest issue with Articulate Storyline 360 is version control and not really being able to update your content once your trial expires.
You can either copy and paste your writing samples into a new page on your portfolio site, or you can put a downloadable version of your writing sample onto a page! And for the mini course, this will be an example of how you build a multi-page course within Google Sites (that you use to teach someone something). This includes pages that are linked/structured together that a learner can click through to learn a new topic/content. Usually I like to have a few modules in a mini-course so recruiters can get an idea of how I would structure/create a course!
