I'm wondering if there's a difference in the cooking temperatures for the sugars. I'm trying the dark sugar now. I like it, but I wonder the sweetness of the lighter.
@@thomhoffman2902 i am not sure about the temperature. As I know is using medium low fire cook to avoid burn. I bet the sweetness will be the same comparing the dark and light color version.

The one i saw in Maldives looks very different. Same heavy consistency but Dark brown like honey. It was called rihaakuru I think. Its such a coincidence am making boiled fish n really wished I had rihaakuru then I saw this video 😊
Rihakuru is fish paste made as a byproduct in tuna fish processing to maldivefish/maasi. This is concentrated coconut palm sap extracted from its inflorescence called coconut jaggery, when prepared to a lighters consistency then it is coconut honey.
It is available in Mangaluru. My mother was a coconut and palm sugar vendor who used to go to various markets to sell it. If you have friends from Mangalore or a Mangalorean shop in your neighborhood you will surely get it.
