The main reason for oiling the flute in this manner is that it provides a thin layer of protection inside the bore against moisture penetrating the bamboo. Moisture penetrating the inside walls will make it softer and therefore less rigid which in turn will slow the response. The bamboo's outside layer (the layer you see and touch) is hard and impenetrable to moisture. Not so inside the bore. It is also inside the bore that moisture builds up as one breathes into it. If you play for some time, you will see the moisture build-up is so much that water drips from the bottom of the flute - especially so during colder weather. Moisture penetrating the bamboo from the inside will also make the bamboo susceptible to fungal growth. A thin layer of oil protects against all of this. It is best to use oil that is less viscous to avoid sticky oil buildup.

Cooking oil will get fungus. Bajaj Almond oil contains mineral oil, so no fungus issue.
