+e8ghtmileshigh1 you'd actually be wrong in this case, kobe has to be cooked to medium because of its high fat content, you have to cook it enough so the fat dissolves thoroughly into the meat to give it that tender melt in your mouth feeling. Kobe is not the typically steak cut you home-grown chefs are used to with the pepper salt few mins sear and thrown in the oven barbaric methodology of a perfect steak. There is a world of cooking out there beyond your small little kitchen.
Many people say, "Quality over quantity." But in this case, I'd rather get me a nice 16-18 oz New York Strip for 25-30$ that tastes plenty good enough, than a 2 oz steak that will force me to hand over an arm and a leg to enjoy 2 bites of. Kobe beef might be the king of steak in the taste department, but it's blown away in every other case.
You really must try it at least once, the texture, the taste and the fats of Kobe are just simply amazing. It literally melts in the mouth. You don't have to keep having it, but just try it once and you will love it, trust me.
I've probably watched this video easily 10 times now. Thankfully, when I have my return flight from Thailand and the Philippines there's a stop over in Tokyo. Feb. 19th I have reservations to go! I can't wait!

+Cooking with Ai Merry Christmas Ai. I just had my first round of Christmas dinner tonight at 和三昧. Food is quite nice. The abalone was big and was rich in abalone taste, associated with plenty of seafood sweetness. Its texture was also well controlled by the extent of cooking-----not too soft and not too chewy. In the past I didn't like the bitterness of abalone's liver but I finished the whole tonight. As for the Kobe beef, we chose A4, but the fat content was MUCH higher than those A4 shown on internet photos. I don't know if this is good or not in terms of Kobe beef grading, but to me there was too much fat. Overall the food was nice but a bit too expensive. (~US$206 per 200g of A4 Kobe beef) Cheers!
The chefs at Mon Cher Ton Ton are amazing. A tip is to challenge them. i said "i like beef, make me something good." and i could spend the 14 hour trip to japan alone to eat there again.

Exactly that is why I try and find meat that has lived a decent life and is not factory farmed and tortured. Also respecting the animal and not wasting food. Few small things I like to do.

Did you ask why he kept gathering the steaks up to another? Im guessing its for "saving juices" but with my theory if the meat gets air and heat on the sides, it "singes" and closes up the pores, so you keep all the juices. Also ive seen before their cutting up the meat, is it because it just has so much fat? And bacon substitute for butter sounds pretty overkill, i dont know what i like the most on a steak (kobe steak)

Well when I get to japan in the autumn I can put my face against the window there and look in then go and find some teriyaki and sit on a bench and just imagine haha ;) I like the performance aspect of the cooking!

I know this will sound like blasphemy, but I don't like Kobe beef or any similar foreign recreations of it. I've had it before, once, and it's just... okay, I like my meats to be gamy. I love lamb and goat and venison, I like the cheap cuts of beef because they're so strongly beefy flavored. And the Kobe beef was delicious, sure... just really delicate, light, meltingly tender. But it lacked that kick-to-the-head oomph that gamier (read: "cheaper") cuts have, and that's one of my favorite parts of eating meat is that strong gamy, meaty taste. One of my biggest problems with Japanese cuisine in the first place is the heavy reliance on delicate and subtle flavor. I'm much more in favor of styles of cooking that use lots of bold, strong, in-your-face flavors. Lots of chilies, lots of bitter veg, lots of potent seasonings.
+Corinn Heathers It's just personal preference, nothing wrong with that. I believe what you mean is that you like foods with strong flavor, not the light one, and that is completely understandable. It's just like someone eating and cooking foods that are super spicy while others do not.
+Corinn Heathers I completely agree. Kobe has a great distinct flavor but they are fed so much grain that they lose all of the taste provided. That alone is a downside but then the fact that half of the chew feel is fat gets me too, almost like im eating a cube of fatty tuna on mouthfeel. I like a nice crust and a thinned fiber steak that releases juices and melts in your mouth. Not a semi meat mush that is kobe. I have had wagyu as well and prefer it to both.

Yes He's Poochie a rescue dog, my friend found him as a newborn puppy in the middle of the road. I foster rescue dogs until they find an owner. Poochie however is now permanent. I wish I could get beef that good here in a small Spanish Village. No chance, they don't even have beef, I have to go to a bigger village for it.

I just ate a cheap piece of Rosbif with a sauce (lime juice+fish sauce+garlic+chili pepper+red shallot). Worth like $4 USD for the same amount of meat you ate. you usually scratch off two zeroes form the yen and that will be your dollars then make your adjustments with the current rate. So 30000 yen as of today is $243 dollars which makes the entire meal totally worth it for the quality
Very nice, excellent dinner. Only note: why fry/grill the Italian black truffle?? It's best preparation is on top of a fried egg laid on thin rice, you fry the bottom of the rice for more crunchyness and the subtle egg boosts the truffle fragrance and taste. Never cook/fry/bake/grill the truffles.

I know this will sound like blasphemy, but I don't like Kobe beef or any similar foreign recreations of it. I've had it before, once, and it's just... okay, I like my meats to be gamy. I love lamb and goat and venison, I like the cheap cuts of beef because they're so strongly beefy flavored. And the Kobe beef was delicious, sure... just really delicate, light, meltingly tender.
But it lacked that kick-to-the-head oomph that gamier (read: "cheaper") cuts have, and that's one of my favorite parts of eating meat is that strong gamy, meaty taste. One of my biggest problems with Japanese cuisine in the first place is the heavy reliance on delicate and subtle flavor. I'm much more in favor of styles of cooking that use lots of bold, strong, in-your-face flavors. Lots of chilies, lots of bitter veg, lots of potent seasonings.
***** People are usually like "omg turn in your foodie card" when I'm all, nope, do not want. :P

+Corinn Heathers It's just personal preference, nothing wrong with that. I believe what you mean is that you like foods with strong flavor, not the light one, and that is completely understandable. It's just like someone eating and cooking foods that are super spicy while others do not.
+Corinn Heathers I completely agree. Kobe has a great distinct flavor but they are fed so much grain that they lose all of the taste provided. That alone is a downside but then the fact that half of the chew feel is fat gets me too, almost like im eating a cube of fatty tuna on mouthfeel. I like a nice crust and a thinned fiber steak that releases juices and melts in your mouth. Not a semi meat mush that is kobe. I have had wagyu as well and prefer it to both.

Yes He's Poochie a rescue dog, my friend found him as a newborn puppy in the middle of the road. I foster rescue dogs until they find an owner. Poochie however is now permanent. I wish I could get beef that good here in a small Spanish Village. No chance, they don't even have beef, I have to go to a bigger village for it.

I just ate a cheap piece of Rosbif with a sauce (lime juice+fish sauce+garlic+chili pepper+red shallot). Worth like $4 USD for the same amount of meat you ate. you usually scratch off two zeroes form the yen and that will be your dollars then make your adjustments with the current rate. So 30000 yen as of today is $243 dollars which makes the entire meal totally worth it for the quality

It's best preparation is on top of a fried egg laid on thin rice, you fry the bottom of the rice for more crunchyness and the subtle egg boosts the truffle fragrance and taste.
Never cook/fry/bake/grill the truffles.
