every game introduces dogs again in the late-game and you think “okay, I get it - been here before” then realize too late they now deal half your life bar in 2 bites and suddenly you’re killed by them all over again. I fucking hate dogs
Part of the reason the Watchdog of the Old Lords is so rancid as a Defiled Chalice boss is because while physical damage is reduced to compensate for your lower HP, fire damage is not.
I kinda wish you didn't include bosses, I think by broadening your criteria to include two completely different enemy roles you weaken any comparisons you can make about mechanics and use. Sif would suck if used as a dog with one or more chasing your ass down as it would be overbearing and his limp would hit weaker when you are to busy running to notice it. Similarly a single dog in a room is a bad boss. Design, animation, size, placement, all these are important yes. BUT. The thing that separates the good from the bad dogs is how they play with the other enemies and environment. Something much less relevant for most boss fights in my experience.

I blame the Resident Evil 1 dogs that harass and chormp you the second you begin the game. Are those not the origin of the nasty doggos in 3d games? or is the origin in some older title?

Demon Souls dogs in NG+ are the hardest enemy in the game. If you put 5 in a small room that would be a harder boss than Malenia and Orphan of Kos
