We all have different opinions on each anime, so I'd say just form your own even with some comments that will be made, MHA specifically. Also, I think it's better to watch the openings and endings AFTER each season, just so no spoilers can be shown, if I'm remembering correctly here.
You guys mention in the beginning "how about a happily ever after"... You should try Frieren: Beyond Journeys End. One of the best animes to release in 2024 and every episode just fills you with happiness, only one season out right now but S2 has been confirmed already :)
