CYPRIOT SAUSAGES “SHEFTALIES” - INGREDIENTS
Caul fat for wrapping
1 kilo minced pork
1 cup bread crumbs
1 cup of white and red onions
1 cup flat parsley
1 teaspoon salt
1 1/2 teaspoon freshly ground pepper
2 teaspoons dried mint
1 teaspoon cinnamon
2 tablespoons olive oil
3 tablespoons lemon juice
4 tablespoons milk
INSTRUCTIONS
In a large bowl, mix the minced pork and all the other ingredients
together until well combined.
On a chopping board carefully unravel the caul fat and stretch it
out. Take some of the filling about the size of a large egg and shape it between the palm of your hands. Place it at the edge of the lace and fold over once and then the outside edges and roll it once more to make a neat little package. You can either thread them on skewers or place them on a wire basket grill to cook on a charcoal. Keep turning them over to cook on all sides.
Serve with chopped cubes of onions, cucumber, tomatoes and plenty of parsley, finishing by squeezing plenty of lemon juice over them. ENJOY!!!!

Dear Mr. Antoniou thank you very much for taking time and cooking all these delicious dishes. I’m persian but I grew up in Cyprus (from the age of 5 until 20) and now I live in Germany. I miss the delicious cypriot cuisine but thanks to you I cook often greek cypriot dishes for my family, boyfriend and friends. You explain in the best way possible the way to achieve the top taste of those dishes, and to be honest, when I cool them at home they taste exactly like what I used to eat in Cyprus. Thank you very much again for teaching us the traditional cypriot tastes.

This is one of my favorite dishes.. I always remember having them at a small Cypriot taverna many years ago, when I was a student in Thessaloniki.. I have never forgotten that taste and I am sure I will find it again through your wonderful recipe. The taste of greek ''meraki' and beloved tradition.. I'm Greek myself and I know how to make them but I've never done them with cinommon ,mint,and olive oil and I know they taste great, I'll have to try it your way stavros and taste the difference happy eating and keep making great short films like this because I'm always open to new ideas thank you 😆😆

@@stavrosantoniou2080 This is a Turkish Cypriot dish invented by Chef Ali in Nicosia. He named it Chef Ali kebab when his customers loved it and ask him what it was called. Over the years people started to called this Şeftali kebab as it kind of sounded like Chef Ali. Şeftali means Peach 🍑 in Turkish. So this name stuck with this dish ever since. I cannot believe someone’s trying to come up with a alternative story. This is obviously made up for political reasons as always

Thank you for that nice comment! In some parts of Cyprus they use milk to make the filling moist and softer and other parts use cinnamon as well, for extra flavour. You can check other recipes on YOuTube (Eleni's Sheftalies) then you can compare which one is best! Happy New Year!!!

The recipe is amazing as always, I will do it, howeve, it would be impossible for me to find the fat mesh you are using so I will try to do without. Maybe It can be replaced with something else ? Hello my friend Drendee. Great to see you again! I hope that all is well with you and all your loved ones.... I often think of you every time I have a new video. It's the only time I can communicate with people I enjoy talking to, even if it is to exchange few words about food when you are so far away! We are a very close knit family, and share our sadness as well as our happiness. The same with friends! -- You can obtain the "caul fat"as it is known, from your butcher in your neighbourhood. It is very difficult to find. I have to go to the other side of London, to buy it from a Greek Cypriot butcher. They always sell it, where there is a big Greek community. This is what gives that unique flavour to the sausages, especially when it's cooked on the charcoal! The alternative way is to make them like Beef Burgers, and cook them under the grill! Dear Stavros :) I am so pleased to hear from you :) I have been under a lot of stress for almost a year because of my mother's serious health problems. Of all gifts God may offer us, good health is the most precious one and we only come to realize it when we or our loved ones are ill. I still hope that everything will be OK.... I try o be strong and positive. Thank you so much for replying to my comment, I really enjoy talking to you , even if it's a few words from time to time. The world has become a global village and we are lucky to be able to make friends even if they live far away :) Take care, with all my best wishes :)
Dear Drendee, Sorry for my slow response. The weekend is always so busy with family. But you know that every moment spending with them is very precious! Sorry to hear about your mother's serious health problems. Is she any better now? I can relate with you with stress. We are going through the same with my mother. She lives alone and will not move in with any of us because she does not want to loose her independents. I don't really blame her. She goes to bed and gets out of bed when she wants to. She puts the television on and so forth. Although she has all her faculties, she can hardly walk even with zimmer frame. Of course we are all worried about her in case she has a fall! Also having a big family, though very rewarding it also has it's worries.
The days of dropping in to visit your neighbours are over. It would have been very nice if the world was like a small village. We knew each other, our doors and windows were always wide open. Now days you double check everything for security. We don't know our neighbours!

There is a saying in my language which is so relevant when it comes to old people 'You cannot replant an old tree', you cannot move old people from where they feel secure and independent. Another thing is that older people don't want to be a burden for their children and want to be independent for as long as they can. They don't understand that in this way they actually become a burden for their children who worry and stress out every single minute and worse still - feel responsible for the parents and guilty if something happens to them when they are left alone and unattended. The decision to move in with one of the children would be for your mother an act of showing love for the loved ones, not an act of surrender.
I can only imagine the amount of stress and anxiety you are going through.As for my mum, she is a cancer patient and this needs no further explanation. Luckily we live with her in the same house and always have, so I am the one to be around , help and support at all times. I try to be positive and hold out hope. With all my very best wishes as always :)
I know what you are going through. We have lost friends and family to cancer. So I can understand the stress, the agony of it and all the worry. It's with you 24 hour a day. All I can say is for you to stay strong,
or else you will suffer ill health, and I am speaking from a experience!
