The Sektion 26x36 cover panels can work w/o cutting if island measurements are just right. That’s about the only thing I can think of off the shelf at IKEA for avoiding an unfinished edge.

Personally I like the look of a full panel in the back and toe kicks around the rest. If you prefer the toe kicks all the way around the process would be the same only cut cover panels to the cabinet frame size. Hope that helps.

Ikea sells an island kit to easily screw the back cover panel top and bottom 9:28

You could put 2 by 4 underneath on the kicktoe and put ikea trim on top instead of the plastic legs
