  • We are so delighted to team up with Chef Aoife Noonan and Fyffes to create this beautiful Hummingbird Cake.
    A cousin to the much-loved carrot cake, the hummingbird cake is also fantastically flavourful with spices and pecan nuts, but it’s also bursting with vibrant fruitiness with the addition of bananas and pineapple. And, as every good carrot cake enrobed in cream cheese frosting, so is the hummingbird cake. Decorate with dried pineapple flowers to make this easy-to-bake cake an absolute showstopper, but if you don’t have the time to make the flowers ahead, you can also simply decorate with more toasted pecan nuts.

      They are actually really easy to make and they look great on cupcakes or even just a little snack by themselves.

    This looks so great I am make it even the flowers they look lovely. Sometimes I want to do something that just looks grand and it looks like it is fun to make.

    Can I switch out the seed oil for butter or coconut oil?

      You could use coconut oil but make sure it is melted. I would avoid butter as a substitute for this.

      @@ilovecookingireland Cheers. Why would butter be inadvisable, out of interest? Ghee any better?

      @@Myrkskog It's just a different type of cake and you might need to play around with amounts and the texture will be different.

      Almost all cakes are baked at 350F. By the way, here's the link to the mother of all Hummingbird Cakes. It was published in 1978 in Southern Living magazine.

    No wonder you don't supply the calories involved.
    I think it's 8764 without the pineapple decoration, which makes it 730 a slice if it's cut into 12 - but who actually cuts them that small, or would only have one slice!! 8o)
    I'll be having salad the day after making this . . .

      It is certainly a cake for special occasions and feeds 12-14 people.

      Stop worrying. There are no calories in this recipe, only ingredients.

      @@pter7531 An excellent viewpoint. I'll only count any calories in the frosting, because then I can't see the other parts of the cake ;o)
