INGREDIENTS
1 pound pasta (penne, ziti, or ditali)
1/2 cup olive oil
1 tablespoon lemon zest, in thin strips
1 bay leaf
1/2 teaspoon chili flakes (optional, for the sake of small humans)
1/2 teaspoon black pepper (optional, for the same reason)
2 garlic cloves, slivered
1/4 teaspoon fennel seeds
1/4 cup pine nuts
2 tablespoons capers, coarsely chopped
1 tablespoon preserved lemon, rinsed and chopped (optional)
12 ounces olive oil-packed tuna (slightly more or less is fine)

This was absolutely delicious - made it tonight for the two of us. Added a couple of Swiss chard leaves, sliced into the pasta water toward the end of time. For the next time, I will add the suggested preserved lemons - didn’t have any in - but there was still a good lemony flavour. And bonus - still some left for tomorrow’s lunchtime Buddha Bowls!

That's not actually the Zuni's preserved tuna, but close enough. Great to see kids cooking happily and knowing so much, but with Amanda for a mom...;)
