      Thank you for the coconut milk. I have not been able to enjoy creamy soup since discovering I have an intolerance to milk. This should be the solution!

    Just made this tonight. OMG. So delicious. Used boneless skinless chicken breasts. Fall apart goodness. I added 1 teaspoon of salt and pepper. Could have used a tad more salt. Leftovers for tomorrow. Wife loved it also. I simmered mine for 60 minutes. Added the slurry the last 5 minutes. Thanks for another awesome recipe.

    I love that you always say what you can substitute or omit from a recipe. That is really helpful if you don't want to buy a whole bottle or jar of something when you're just trying out a recipe.

    Great job as always Flo! Your Recipes Rock!
    I just made this with a few changes for simplicity.
    Jarred garlic instead of fresh. Squeeze ginger instead of grating fresh.
    I have no trouble with curry, so I used 3 heaping teaspoons on Hot Yellow Indian Curry powder instead of the Cumin and turmeric. It is honestly not too spicy at all after that. if you want it hotter add some Sambal or Siracha.
    I also added several dashes of fish sauce for flavor.
    This batch makes a bunch! It is delicious too! A real crowd pleaser! Thanks Flo!

    Flo I have to tell you, years ago when I was in university there was a vietnamese restaurant that made an amazing coconut curry served with rice noodles. It closed down eventually and to this day, my husband and I would lament about how much we miss that dish. Your coconut curry chicken looked so good and easy that I decided to try it. I ended up using fish sauce because I ran out of soy, added a few bay leaves and when I tasted the sauce, my jaw dropped. This tasted just like that same dish from years ago! Shocked, I made rice noodles and served this like a thick soup and it was divine. Thank you for this recipe and for giving me back such a core flavour back into my world. Prior to this, I had never used a whole tsp of cumin in my cooking and it was delicious! You are a gem!❤

    This is similar to a curry I make from Cambodia that uses lots more ingredients and spices. I'll try this and see if it hits the spot without taking more time.

    Where im living, im finding soy, oyster, and fish sauce only, but i love asian food.
    So I have to play a lot to get tolerable substitutes.... 😀

      Not usually in Asian cooking. It’s best to use a neutral tasting oil and one that can withstand higher temperatures.

    This looks like another great and easy recipe to try. Thanks again Flo. However tumeric has a very bitter taste. Is 2 teaspoons not too much?? I usually use like a 1/4 teaspoon in my dishes.

    This looks so good! But are we using curry or cumin? Both are mentioned verbally but which is it? I know Flo mentioned that there are only 2 spices in it. One is tumeric but is the other curry or cumin?

      The combined flavour of the ingredients would be considered a mild curry in this recipe. Curry powder is essentially a mix of different spices. I am not using a curry powder here, just cumin and tumeric. Hope that helps.

      Portuguese Chicken
      2# chicken thighs or breast, cut ~1 1/2 in size
      Make sauce:
      1 T sugar
      2 T soy sauce
      1 T Shaoxing wine, rice wine or bourbon
      1 T cornstarch
      1 t grated ginger
      Stir these up and add chicken; marinate a half hour
      Prepare veggies, cut ~1 1/2 in size:
      1 lg/med onion
      4 potatoes, not russet
      3 carrots
      2 cloves garlic, minced
      Sear chicken in wok in batches, all over, will be simmered later.
      Add onions, 1-2 min until translucent
      Add garlic, 30 sec
      Add carrots and potatoes
      Add one tsp cumin
      Add 2 tsp turmeric
      Stir; add 1 1/2 cups chicken stock
      Add 1 can coconut milk
      ADD 2 TSP SALT
      Add chicken back in with juices
      Mix; cover, turn heat down to simmer
      Simmer for half hour; check for fork tender veg and chicken cooked through
      Then add cornstarch slurry: 1 T cornstarch mixed with 1 T COOL water, to thicken
      (More slurry if needed)
      Serve over rice.

    I'm interested in trying this recipe but there is a discrepancy in the ingredients. At the beginning of the video you added cumin, yet throughout the remainder of the video you discribed it as a curry dish. Your recipe book lists cumin. Other recipes on the internet vary...some use curry and others use cumin. However, there is a big difference in flavor. If you could clear that up, I'd appreciate it. Thanks 🤔

      The combined flavour of the ingredients would be considered a mild curry in this recipe. Curry powder is essentially a mix of different spices. I am not using a curry powder here, just cumin and tumeric. Hope that helps.
