    I went to my local meat purveyor and the lowest priced lamb product was lambs tongues. These worked well!! Next time, if I can get some lambs tongues again, I would also look for some port tails as well for the pot.

    mutton is my favourite meat. it's sad it's not as available as beef and pork in north america.

      Same in France. Unless you find a specific shop but in my town, hard to find mutton too.

      Plastic is made from fossil fuels and is completely man made from industrial processes. Asafoetida is made from the substance that oozes out of the root of giant fennel. (in much the same way that a maple tree exudes sap and makes maple syrup), dried and powdered quite often and it's a completely natural ingredient. If you've eaten Indian cuisine you've eaten Asafoetida as its widely used.
